Grilled Fish Tacos with Chipotle-Lime Dressing
I loved both the marinade and the sauce... but not together. I followed the marinade recipe very closely only subbing white balsamic for distilled vinegar. I marinaded flounder fillets for about 12 hours and grilled using tin foil on the outdoor gas grill. AMAZING...would enjoy the fish plain served over rice as well. For the sauce, I only used 1/4 C adobo sauce and it was still very spicy and bold. When I used the sauce on the tacos, the over powered everything else and it was all I could taste - which isn't what I wanted to with good fish fillets! The next day, however, I used the sauce with leftovers (frozen fish stick tacos) and enjoyed it very much as I didn't want to taste the fish sticks as much.

Real Strawberry Frosting
I "peeled" my strawberries to remove the seeds. This reduced the gritty texture, but still left an amazing fresh strawberry flavor. I used them on jello poke cupcakes (lemon cake, strawberry gelatin) to make strawberry lemonade cupcakes. Thank you for the recipe, it is wonderful!

Thanksgiving Flavored Turkey Burgers
I used 1 lb of turkey and scaled the rest of the ingredients down accordingly. I whipped them a few hours before hand, wrapped individually in plastic wrap, and refrigerated to ensure they would hold their shape. This made 5 nice burgers. Be careful, as the stuffing can cause these burgers to burn more easily than 100% meat burgers! I topped with gouda, jelled cranberry sauce slices, & fat free cream cheese. I also used pumpernickel hamburger buns, which gave for a nice presentation. Next time I would add 1/4 cup or so of water to the stuffing, as they got a little dry without. Would make again... thanks for sharing!
