Pancake Stack with Syrup

We made the syrup only, not the pancakes. Also, we used vanilla extract instead of rum extract. The syrup came out great and saved us a trip to the grocery store!

Pumpkin Pie Bars

This recipe was a bit of a challenge. It was my Plan B because I couldn't find regular canned pumpkin in the store to make my original recipe. I haven't tasted it myself, but my husband said "your pumpkin stuff is awesome". :) I made one significant change on accident. I used sweetened condensed milk instead of regular or evaporated milk. I didn't realize this was wrong until after it was done. At first I thought this would make the dish too overy sweet, but it seems to have turned out ok. The other thing I want to say is that this dish was NOT "easy". I cook a lot and make all types of recipes with varying levels of difficulty. This one might be considered "moderate", but is by no stretch "easy". I allowed this to cool for about 30 minutes, and then left in the fridge overnight. I recommend serving with a spoon (not in bars) and coupling with whip cream topping.

Pancakes

Used all purpose flour with 1 1/2 teaspoons of baking powder and 1/2 teaspoon of salt. Came out great! Much better than the boxed batter! :)

Butter Cream Frosting II

This frosting tastes good and was easy to make. The only problem I found is that 1/4 cup of milk was not nearly enough for me, and 5 cups of powdered sugar was too much. It started getting crumbly as I was putting the third cup of sugar in. I ended up using 1/2 cup of milk and 4 cups of sugar. It was spreadable, but still too thick. I managed to get my crumb coating done, but then had to add another tablespoon of milk to my remaining icing to get it to ice properly. HOWEVER, with that said, this is the best any frosting has come out for me. That's why I'm giving it 5 stars.

Six Can Chicken Tortilla Soup

We make this soup about once per week now. It's super easy and hits the spot. I use one can of tomatoes with regular chiles and one can with habaneros. It adds a ton more spice, if you like that sort of thing. :)

Whiskey Chicken

I followed this recipe perfectly and even used top of the line whiskey. I didn't like it at all. So much that I couldn't even finish what was on my plate. My husband eats everything and he didn't like it either.

Baked Teriyaki Chicken

We love this recipe! I've made it several times. Only thing I do differently from the recipe is that I double the recipe for the sauce for the same amount of chicken. Love it!

Cake Mixes from Scratch and Variations

I have to say...I wasn't a big fan of how this cake turned out. I'm a HUGE cake eater too. Weird! I followed the directions exactly and used a stand up mixer, but it just wasn't pleasing to me. I'm giving it a three because it could've been my fault for screwing it up.

Creamy Chicken Lasagna

This dish was the first meal my husband ever cooked for me when we were dating. It's absolutely heavenly! He serves it with garlic bread, and it's just the most wonderful dish ever! The cream cheese is the secret recipe! :) Love it!
