Pumpkin Gingerbread
this was sooo YUMMY!!.. My son has a egg allergy so for two eggs i used egg sub.. then for the other 2 I used 1/2c apple sauce.. i also used half the oil and the other half i used more apple sauce. Because of that i held off half of the water and waited till i had everything mixed so see if I needed more. I didn't want it too spicy for the kids so on the clove, allspice and ginger i cut 1/4 tsp out. and sub 1/2 cup of brown sugar, and only two cups of white. (i figured the apple sauce adds sugar too.) made muffins out of them and added chocolate chips too some.. so yummy a definate keeper.

Mom's Zucchini Bread
it is pretty yummy. i added apple sauce and cut down on the oil, and added some extra spices. But it was yumo. I think next time i am going to add a litte orange juice concentrate just for kicks.

Meatloaf with a Ranch Twist
I liked it a lot. I didn't have onion powder so I used chopped onion, which added even more liquid, so took longer to cook. and i didn't have V8 so i used water and katchup. I liked the sauce more a a glaze and not so thick so i didnt let it thicken alot. I think I would of enjoyed it better if I had let it set more but we were starving and it had already been 1 1/2 hours. But I emailed it to family.
