Bela's Stuffed Red Bell Peppers

Delicious! I cooked my rice in 2 cups of low sodium veggie broth for some extra flavor, used black beans instead of pinto (what I had in the pantry), and used the entire onion and whole bunch of rainbow chard. You can never have too many veggies! I would recommend some hot sauce (cholula, sriracha, etc), or even some cayenne, thrown into the filling. Otherwise, great as-is!

Vegan Black Bean Burgers

I did not use the seafood seasoning (didn't feel like spending $6+ on it at the store) and they still turned out great! I used panko crumbs instead of bread and tossed in an egg instead of cornstarch. I ate it on a kaiser roll with jalapeño mustard, ketchup, vegan mayo, dill pickles, and mixed greens -- amazing!!

Mexican Bean Salad

Delicious! I don't think the corn is necessary, but the flavors are great. Like others, I cut everything in the dressing in half because it seemed like too much. It still tasted fabulous. Additionally, this is waaay more than 8 servings. I'd almost double it, in fact.

Delicious! Slightly altered the recipe: used less butter and added mushrooms and a teaspoon or two of garlic powder. Otherwise, made according to directions and enjoyed very much.

Grilled Chicken Noodle Soup

I used low sodium chicken broth (6 cups + 2 of water) so it was a bit bland until I spiced it up with additional salt and some cracked red pepper, but very tasty! I grilled the chicken with some garlic and onion powder on each side on a grill pan and added some garlic to the soup. I added 2 cups of frozen mixed veggies just because I like lots in my soups. I made the mistake of adding 3 cups of noodles. Waaay too much noodle, but I've learned my lesson! I think 1 1/2 might have been a good amount.

Delicious! I made it with mashed bananas based on reviews and had to replace the sour cream with fat free greek yogurt, but it was still very moist. I think it'd be great with blueberries or chocolate chips.

I made it exactly as written and was rather disappointed. Perhaps my personal taste, but I found the tomato paste overpowering and the oregano too strong. I would maybe try again with a lot of alterations.

It was ok. I'm not a fan of the cinnamon, which hits you after the other flavors and seems overpowering. I think if I left that out, I'd like it a lot more.

Yum! Although, I realized as I was making it that I had used vegetable stock and not chicken, but I don't think it mattered much. A great low-fat soup that still fills you up.

White Chocolate and Cranberry Cookies

I didn't have brandy so I had to use vanilla extract but they were still tasty! A little on the sweet side for me, though. I'll cut the sugar a bit next time and maybe replace some of the butter but I love the cranberries.

Yum! I didn't know what to expect from these because they're so simple, but delicious! I used a 9-inch square baking pan because I didn't have a 7x11. Came out just fine in the 20 minutes. Will definitely be making these again!!

Butternut Squash Risotto

Easy to make and very creamy. I messed up the wine portion (used a sweet reisling instead of a chardonnay or something dry) but it was still very good. I thought it could use a bit more squash, though.

Very tasty! Like other reviewers, I too cut the sweet potato into smaller pieces so it took maybe 45 minutes to cook. I included white potatoes in the mix as well.
