Chicken Enchiladas Verde

I've made this dish a few times and I continue to tweak it but it's a total winner! I insist on using corn tortillas but next time I'll just layer them and call it an enchilada casserole. (They crack so easily.) I used poached chicken breast, shredded; no water; blended red salsa for the tomato sauce; no green pepper, only a small can of mild chopped jalapenos; and a large can of green enchilada sauce.

Five Views Feta-Crusted Salmon

Wow - feta and salmon is outstanding! I used greek yogurt, no mayo, and broiled the salmon a touch at the end just to brown it. It was a great lunch the next day, too! (Hint: Only microwave cooked salmon on defrost, just to bring to room temp.)

Slow Cooker Chicken Taco Soup

I used 28 oz can crushed tomatoes. 3 large chicken breast halves, capful of Costco taco seasoning. small can mild green chiles. Not too spicy but I added salsa to mine, Robert didn't. I just shredded the chicken with a fork and knife - so tender!

Balsamic-Glazed Salmon Fillets

This was an easy and flavorful treatment for a salmon filet. I'll make it again! I used double the white wine and put dried oregano in the glaze. And I didn't add any salt and pepper.

Garam Masala Cod

We loved this as a concept - it was delicious! I halved the cayenne, as suggested by others, and I would probably tone down the spices next time but we were amazed at a marinated cod that was yummy without being battered and fried.

Candy's Five Spice Powder Chicken

Wow! The five spice powder sauce made this fabulous - and my five spice powder was probably 10 years old. I used the powder and the fresh ginger, both. I had bok choy, mushrooms, green onions, sliced carrots and snap peas on hand rather than yellow onion and green pepper. It worked very well and I'll make it again. It wasn't too saucy but there was plenty to serve together with sticky white rice.

Cochinita Pibil

This Yucatan style pork is so flavorful - and not too spicy hot for us! I marinated the pork overnight and cooked it in the crock pot for 8 hours, then served it on corn or flour tortillas. I never made the red vinegar sauce because it was plenty juicy already. Yummy leftovers, too.

Eggplant Snack Sticks

These were delicious! But I used bread crumbs instead of wheat germ and a whole egg and cut the eggplant widthwise, rather than lengthwise. So, we loved my version.

Real Chiles Rellenos

This is the first time I've made Chiles Rellenos from scratch. They were well worth the effort! I made and stuffed them early in the day and froze them, as directed. The batter is so wonderful and delicate!

Pan-Seared Ahi Tuna with Blood Orange Sauce

My ahi tuna steaks were almost an inch thick and I seared them about 4 minutes per side and they were cooked just right. I started the sauce in a separate pan, using a cup of fresh juice from Cuties mandarins - then added the mixture to the fish saucepan when the steaks were done - to save time. The sauce was excellent and I'd use it again on cod or halibut.

Pad Thai

As suggested, I added garlic when I sauteed the chicken (chopped in 1/2" chunks), I tripled the sauce, added 3 tablespoons peanut butter, added shredded carrots, and used rice vinegar. This was excellent! I'll use half the sugar next time, but that probably helped make it excellent.
