Pad Thai

As suggested, I added garlic when I sauteed the chicken (chopped in 1/2" chunks), I tripled the sauce, added 3 tablespoons peanut butter, added shredded carrots, and used rice vinegar. This was excellent! I'll use half the sugar next time, but that probably helped make it excellent.

Baked Dijon Salmon

I made this last night with Costco farm raised salmon. I substituted pine nuts for pecans, panko for bread crumbs and just forgot the parsley. This was very, very good and we enjoyed this new variation for salmon, which we eat often.

Amber's Sesame Chicken

Wow! The five spice powder sauce made this fabulous - and my five spice powder was probably 10 years old. I used the powder and the fresh ginger, both. I had bok choy, mushrooms, green onions, sliced carrots and snap peas on hand rather than yellow onion and green pepper. It worked very well and I'll make it again. It wasn't too saucy but there was plenty to serve together with sticky white rice.

Fabulous Beef Tenderloin

Very simple, very delicious. But next time I'll use low-sodium soy sauce and I probably won't marinade like I did this time (for an hour). I added sliced mushrooms to the cooking and it was all yummy.

Balsamic Roasted Pork Loin

I used pork tenderloin and marinated it for 4 days - because I was interrupted - it was excellent and moist! I did add probably 1 teaspoon dry thyme and 1/2 teaspoon garlic powder to the marinade. I baked the tenderloin at 350 degrees to 160 degrees, per my instant thermometer.

Halibut with Creamy Garlic and Herb Sauce

This was fabulous! I made it last night with wild, fresh halibut and I was looking for a recipe different from the usual creamy caper or panko breading. This was very flavorful (I cut the crushed red pepper to 1 teaspoon), we loved the fresh red pepper and herb combination. So yummy! This morning I realized I forgot to add the almonds but we do have leftovers for them. Definitely a keeper and for company - and easy!

Cocktail Meatballs

I "made" these with 3 pounds of Costco Italian meatballs. I used a whole can of jellied cranberry sauce, a whole bottle of chili sauce, doubled the brown sugar and lemon juice. Then I added most of a jar of boysenberry preserves - just because -and the kicker was two big squirts of Sriracha hot chili sauce. I simmered them for 1.5 hours and brought them to a party at work the next day. They reheat beautifully and they were a big hit - they were all eaten!

Chocolate Bundt Cake

Chicken Enchiladas I

I've made this dish a few times and I continue to tweak it but it's a total winner! I insist on using corn tortillas but next time I'll just layer them and call it an enchilada casserole. (They crack so easily.) I used poached chicken breast, shredded; no water; blended red salsa for the tomato sauce; no green pepper, only a small can of mild chopped jalapenos; and a large can of green enchilada sauce.

Pork Chops with Stuffing

My pork chops were dry and tough. Maybe this needed chicken broth in the stuffing? I might try it again with chicken breasts because I like the concept.

Pan-Seared Ahi Tuna with Blood Orange Sauce

My ahi tuna steaks were almost an inch thick and I seared them about 4 minutes per side and they were cooked just right. I started the sauce in a separate pan, using a cup of fresh juice from Cuties mandarins - then added the mixture to the fish saucepan when the steaks were done - to save time. The sauce was excellent and I'd use it again on cod or halibut.

Eggplant Snack Sticks

These were delicious! But I used bread crumbs instead of wheat germ and a whole egg and cut the eggplant widthwise, rather than lengthwise. So, we loved my version.
