Real Chiles Rellenos
This is the first time I've made Chiles Rellenos from scratch. They were well worth the effort! I made and stuffed them early in the day and froze them, as directed. The batter is so wonderful and delicate!

Delicious Feta-Crusted Salmon
Wow - feta and salmon is outstanding! I used greek yogurt, no mayo, and broiled the salmon a touch at the end just to brown it. It was a great lunch the next day, too! (Hint: Only microwave cooked salmon on defrost, just to bring to room temp.)

Texas Brisket
I made this in the crock pot and the flavor was delicious! I cooked it about 6 hours and the cut probably needed 8 hours - but it was still very good.
