Onions Baked with Rosemary and Cream

I made this for Christmas Eve dinner and everyone loved it! I peeled the onions and they all held their shape just fine. My only addition was a splash of white wine with the broth. The sauce is sooo yummy over mashed potatos. Thanks!

Country Green Beans

This is my new green bean recipe! I did make changes based on reviews... used an entire onion, broth instead of water, and 3 cloves of garlic. I also used canadian bacon since thats what I had on hand.. and it was awesome! This was the first thing to go at dinner. Next time I'll cut the butter way down and omit the salt so we can have this more often and be guilt free. Thanks for a delicious, adaptable recipe! YUM

Patti's Mussels a la Mariniere

This was my first time cooking mussels and I was slightly freaked out... the prep/cleaning felt like a lot of work and I had to throw out about 1/3 of mine because I didn't know to take them out of the plastic bags to breathe. Other than that, the cooking is easy and this makes a delicious sauce. I doubled the sauce ingredients, and used and entire head of garlic. Also had to cook the sauce much longer to get rid of the alcohol taste. It did turn out yummy though.. good with bread and over pasta with fresh grated parm

Grape and Avocado Salsa

The grapes are a great addition to this guac! I love the sweet/salty combo. I did omit the bell peppers. Also didn't have a lime so I used a lemon instead and it was just as good. Thanks!

Curried Butternut Squash and Pear Soup

The depth of flavor in this soup is insane!! I felt like I tasted something new with every bite. My only changes to accommodate what I had on hand... 1tsp dried ginger instead of fresh, used half chicken broth half beef broth, replaced one pear with an apple, pinch of cayenne. THANK YOU FOR THIS RIDICULOUSLY AWESOME RECIPE!!!

The Best Rolled Sugar Cookies

I made cut out cookies for the first time, and I will absolutely do it again. This recipe is perfect. You can make them as thin or thick as you want.... the edges stay slightly crisp and the middle is nice and soft. Thanks for the recipe and thanks to the people that recommended using parchment paper- that stuff is awesome!!

Sugar Cookie Icing

I had to use about 4 teaspoons of milk to even get this to mix together. Was worried that this change would prevent it from drying hard, but it didn't. The almond extract is awesome, but I think the amount needs to be doubled too.

Smokin' Scovilles Turkey Chili

So glad I decided to try a new chili recipe! The combination of ground spices and hot chocolate is absolutely perfect. I omitted the habanero cause I'm a wuss, and I didn't have any liquid smoke. I also had to find a sub for the beer, so I used coffee. Loved this chili!!

Cucumber Sandwiches III

I brought this to a bridal shower and it was the first thing to go!! The mayo makes it creamier which I love. I just recommend serving it on cocktail pumpernickel bread... one inch slices seem way to thick. Otherwise, perfect as is!

Hungarian Mushroom Soup

Wow, this soup is legit! My european parents went nuts over it.. it's just like the kind my oma used to make. My only changes were using 12oz of mushrooms (white, baby bella, and crimini), half the butter, and fat free h&h instead of milk. Somehow adding the sour cream at the end takes the soup to a whole new level. Yum

LJ's Easy Penne with Vodka Sauce

This sauce is really good! I used about 1/4 c heavy cream, and the rest fat free half and half. A little extra vodka, and doctored it up with basil, parsley, and oregano. For me, adding a few packs of splenda is a must. It cuts the acid and gives a hint of sweetness. Served this with sliced chicken breast.

Double Tomato Bruschetta

I made these for a party last night and they were a huge hit. I added about a 1/4 cup of chopped onion and cut the oil to 2 tablespoons. I didn't have any sundried tomatos, but it was still amazing. I think the next time I make this I'll do 1/2 the batch with fresh parmesan instead of mozz to see which is better.

Seven Layer Tex Mex Dip

This is so addictive!! It's definitely my new football party staple. I added two things which I think made it even better... I mixed in about 1/3 cup chunky salsa into the refried beans. I also added a layer of lettuce on top of the sour cream mixture... so much better with a little fresh crunch! YUM

Baked Ziti I

I just scarfed down a huge plate of this.. so good!!! I didn't have enough sour cream on hand, so I mixed it with an equal amount of ricotta. Also doctored up the sauce with some minced garlic, italian seasoning, splenda, and crushed red pepper. Awesome!!

Golden Potato Soup

This is insanely good! Like the first reviewer, I substituted cheddar and bacon. Sauteed the onion and celery in a little bacon grease (plus 2 cloves minced garlic). I didn't add any extra salt, definitely didn't need it. Then followed the rest of the recipe exactly. I tasted the soup before adding the cheese, and it had such great flavor which kind of got hidden in the end. I mean it was still really good, but it was more of a cheese soup with potato. Next time I will cut the amount of cheese in half, and also double the onion and celery.

Easy Roasted Red Pepper Hummus

Oh yum! This is so much better (and cheaper) than store bought hummus. I only used 1 clove of garlic (which was plenty, and I'm a garlic lover) and omitted the basil. Didn't bother to measure out the lemon juice, I just squeezed in half a large lemon. I also didn't have tahini, so I threw in a couple tablespoons of olive oil instead to make it creamy. Worked out great. Oh and its so easy to roast your own peppers instead of buying them jarred. Just cut them in half and broil for about 8 min, set in a paper bag for 25 min, then peel off the skin. Delish. I used one pepper for this recipe. Thanks!

French Onion Soup Gratinee

Oh. My. God. Don't change a single thing.. this soup is unbelievably good considering how easy it is to make. I used dried parsley and tyme because that's all I had. Otherwise follwed the recipe exactly. Heaven!

Eggplant Parmesan II

Yum!! I'm always looking for tasty and filling vegetarian meals... and this is it! I did prepare it a little differently because I was only working with one eggplant. I increased the bake time and temp to 10 min per side at 400. And instead of putting everything together in a baking dish, I just made individual rounds. Kept the eggplant on the baking sheet, topped each with a good amount of sauce, and a slice of fresh mozzarella. Then back in the oven for a few min to melt the cheese. They looked pretty and tasted amazing!!

Eggplant Delight

This is a really good vegetarian meal! Like others, I made some changes.. I added 2 large cloves of minced garlic to the last 5 min of sauteing the onion. I seasoned the eggplant with salt and pepper in the pan, then with a sprinkle of parmesan cheese after cooked. I also sliced two tomatoes, and warmed them in the same pan. Topped it all together, and it was awesome! Will definitely make often.
