This is insanely good! Like the first reviewer, I substituted cheddar and bacon. Sauteed the onion and celery in a little bacon grease (plus 2 cloves minced garlic). I didn't add any extra salt, definitely didn't need it. Then followed the rest of the recipe exactly. I tasted the soup before adding the cheese, and it had such great flavor which kind of got hidden in the end. I mean it was still really good, but it was more of a cheese soup with potato. Next time I will cut the amount of cheese in half, and also double the onion and celery.
