Simple Garlic Shrimp

I love shrimp, but have generally shied away from cooking them myself, fearing that I'd spend a lot of money on ingredients but not be able to cook them the way they should be prepared. I made this recipe exactly as published- no omissions or substitutions. Having the video as a resource really helped my confidence! I made this meal for my boyfriend and best friend last night and it was excellent. I served the shrimp with spaghetti noodles and toasted garlic bread. The only issues I had with the recipe were, first, that I felt the oil was a bit too hot for the garlic (I had to turn my heat down before the recipe says to do so to prevent burning), and that I think it calls for a smidge too much butter- I'll probably reduce it by 25% or so next time I make this dish. Other than that, the recipe was easy to follow and it produced a delicious and GORGEOUS meal. Although it is incredibly rich and therefore a "special occasions" recipe, I will definitely be making this again, especially when looking for a meal that impresses. Just FYI for other beginner/infrequent chefs out there- this dish really does require you to get all your ingredients together and pre-measured before beginning to cook.

Best Black Beans

This recipe is great! I did make a few small changes based on other reviews. I only used half a small onion and I sauteed the onion and garlic in a little bit of butter for a few minutes because I didn't want it to be crunchy. I also drained the beans and replaced their liquid with about half a can of chicken broth and added more cilantro than called for (about half a bunch). Finally, I let the mixture simmer for a lot longer than the recipe calls for- more like 15-20 minutes- to let the flavors blend. I thought the dish was delicious and it paired perfectly with the enchiladas and rice that I was serving. I will absolutely be making this again. Final note: the dish might be a tiny bit spicy for kids- easily adjustable by altering the amount of cayenne used.

Zesty Slow Cooker Chicken Barbecue

I followed the recipe exactly (using Stubb's smokey mesquite barbecue sauce and Girard's Venice Italian dressing) and thought it turned out pretty darn good. The chicken was extremely moist and tender, but there were a few things I'd like to improve. The dish was very wet and saucy even after having cooked for the last hour on high with the crock pot lid off (to cook off some liquid)- I'll have to experiment with cooking time or using thawed chicken to see if that makes the sauce thicker. The other issue was that my boyfriend thought the chicken was too sweet- I can't stand super-sweet barbecue sauce and I was okay with the amount of sweetness, but I will likely reduce the sugar next time to get a more complex taste. I served this on broiled kaiser buns with cole slaw and French's onion crisps- I was trying to recreate a local restaurant's chicken sandwich and it was a pretty close approximation!

Sweet Restaurant Slaw

I found this to be too sweet and too heavy on the dressing- if I make it again I will reduce the sugar by about half and add the liquid to the slaw mix bit by bit until I get the desired amount of wetness- with the full amount of dressing it was just too goopy.

Balsamic-Glazed Salmon Fillets

I made this recipe as-is other than omitting the fresh oregano, as I did not have any in the house. The marinade did smell odd while heating/blending, but I ignored it as per other reviews. The final product was, in my personal estimation, just okay. The flavor was a little sweet for my liking, although it did permeate the fish well and the marinade cooked to a nice-looking glaze on the exterior of the fillet. I used a single fillet of almost a pound, so it took longer to cook (20-25 minutes.). Thanks for the post, I'm always searching for that perfect recipe that will make my boyfriend love salmon as much as I do, this just wasn't quite it!

Easy and Delicious Chicken and Rice Casserole

I followed this recipe almost to the T, except I substituted cream of mushroom for cream of chicken and added some fresh sauteed mushrooms as well as adding some basic spices (salt, pepper, ital. seasoning) to the chicken. The taste when it was done was pretty good, the boyfriend said he liked it. The texture, however, was not good. The rice was mushy and the whole thing looked muddy. Overall, not something I will try again--tasted too much like something I've had in church basements time and again.

Slow Cooker Chicken Taco Soup

This was excellent. I was not very confident about this recipe initially because it was my first crockpot endeavor and most of the ingredients are canned, which made me fear that this was going to taste like canned soup. I also used packaged taco mix and frozen chicken breasts in this recipe. It was fast enough for me to put together between school and work (20 minutes to eat lunch and prepare dinner) and when I got home from work, the entire apartment smelled like delicious chili. I served it with tortilla chips and homemade guacamole and it was fabulous. My boyfriend liked it, too, so it is definitely going into the rotation. Perfect for a rainy day in Seattle, but I can see it shining as a summer potluck chili, too.

Sunny Apple Salad

I thought this recipe turned out great! The apples gave it a wonderful tang, the pineapple and oj concentrate made it sweet enough, and the carrot gave great texture. (Next time I make it I will definitely add more carrot.) I also loved that the amounts weren't fussy at all (I made two servings and it was easy).
