Roast Pork Loin Chop

Reviewed: Aug. 5, 2009
Everyone seemed to be saying these were moist but bland, so I marinated mine in a tequila lime marinade all day. I would say mine turned out flavorful but dry. What did I do wrong! I followed the instructions exactly and they are almost inedible they are so dry. The only difference is that I marinated my chops. I'll try something different next time-- maybe a crock pot chop recipe.

Jewish Coffee Cake

Reviewed: Aug. 7, 2009
This was fabulous! I did modify it based on the ingredients I had and it still turned out great. I only had reduced fat sour cream (probably a good thing since it calls for so much butter). I took the advice of others and used brown sugar for the filling. I also didn't have walnuts and only a handful of almonds on hand. I chopped up the almonds in the food processor and added about 1/2 cup of oatmeal to the mixture just for a little texture since I was low on nuts. My husband ate the whole thing is a couple days and asked when I was making it again! Can't wait to try it with walnuts!

Indian Dahl with Spinach

Reviewed: Sep. 22, 2009
I followed the recipe exactly, except I can't have chili powder so I omitted that. I actually felt the spice level and salt to be good as written. It is missing a zip. I am not sure what I did wrong. I used the coconut milk you purchase in the refrigerator section, so I don't know if it would have turned out better with the canned coconut milk. The yogurt idea is fabulous but I also can't have dairy (I am a walking food disaster-- hard to find recipes!) It is not bad, just missing a zip in my opinion. Maybe I'll try adding some fresh squeezed lemon before serving?

One-Pot Pasta with Tomatoes, White Beans and Pesto

Reviewed: Sep. 29, 2009
I used this as a great base recipe. First, since others thought this was too salty, I halved the bullion (1 cube instead of 2). I also used penne because I didn't have bowtie. Then, I added some sauteed onion, garlic, mushroom, and spinach. This made for an awesome presentation and was so yummy with the extra toppings!

Cranberry Salad VII

Reviewed: Dec. 28, 2009
This is great! I made it instead of cranberry sauce and it was a huge hit. The only problem was that I couldn't find cranberry gelatin. I used cherry which worked fine, but I am sure it would have been even better with cranberry. Also, I was in a hurry to get this thing in the fridge before going to church, so I just threw it all together in a bowl. It turned out great. I don't think the added initial chilling is necessary, nor the additional step of pouring into 13x9 dish. Perhaps it just creates a more interesting presentation or something.

Chicken Wild Rice Soup I

Reviewed: Dec. 29, 2009
This soup was very good and super easy. I used leftover turkey from Christmas and already cooked wild rice. I substituted coconut milk for 1/2 and 1/2 because dairy doesn't agree with me and it still turned out fabulous. I thought it needed a little zip-- maybe a dollop of sour cream for serving? (I can't have that, but others might enjoy it).

Slow Cooker Carnitas

Reviewed: Dec. 30, 2009
My husband is 100% Mexican, born and raised in Puebla, and he said this is the most authentic tasting Mexican dish I have ever made. He was super impressed. I do have to admit they taste exactly like the carnitas we've had on vacations to Mexico. I am making tacos de carnitas for New Years and this is the recipe I'll be using!

Hummus III

Reviewed: Oct. 4, 2010
This is really yummy and easy to make-- so much cheaper, too, than buying those tiny packages at the store. I don't like tahini really well, so I cut it down to a 1/4 cup and added more olive oil. It turned out great!

Roasted Winter Squash Seeds

Reviewed: Dec. 17, 2011
Yummy! I'd add less salt for my personal taste next time. I threw in a pinch of cayenne. That was an even better ideas than I thought it would be. If you like spicy snacks, I'd highly recommend that.
