Beaker's Vegetable Barley Soup

This is super yummy. I had to use vegetable bouillon, so my came out too salty, but it was still so good. I did not add the chickpeas or the curry because I didn't have them. Mine did get way too thick, kind of like a stew, but it doesn't matter. I will try more broth next time, and of course, regular broth.

Mouse's Macaroni and Cheese

I thought this was very good. I had to use Velveeta and Mild Cheddar cheese since i could find cubed American cheese. I also added paprika sprinkled on top. Two of my kids loved it, but unfortunately, the one who would normally eat the leftovers, didn't care too much for it.

Baked Dijon Salmon

This is very good. I used an extra tbsp of honey and panko bread crumbs. I used cracked black pepper and sea salt, which definitely makes a difference.

French Baguettes

Yeast and I do not get along, but I make these all the time for various purposes. I even made them for shrimp po'boys. My kids and husband request them all the time. I use my read machine too.

Slow Cooker Carnitas

I doubled the spices as my roast was a bit larger. I also did not use chicken broth since pork gives out its own juices in the crockpot. I did add chili powder and a can of original Rotel. I think it was great, but I will use ore salt and less cinnamon next time. We served it on tortillas, both flour and corn and the kids even added beans and cheese to theirs. Very good.

Tomato Chicken Parmesan

Tasted better than Olive Garden. My kids begged me to make it again. I used Panko bread crumbs. My chicken breasts were a little thick, so I sliced them in half lengthwise. I also used Classico Fire Roasted Tomato and Garlic Spaghetti Sauce. I lined the pan with that new Reynolds foil that has parchment paper on one side. PERFECT!!!

Super Al's Cocktail Sauce

Chocolate Chip Banana Bread II

Oh my! I have made about a billion different banana bread recipes, and I can say that this is definitely my new favorite. I used half brown and half white sugar, half margarine and half applesauce, fat free mayo, and only five bananas. Sooo good!

Cranberry Muffins

These were so good. I used light sour cream. I cut the sugar to 1/4 cup and used a half cup brown sugar. I added cinnamon both in the muffin and on the top. I substituted 1/4 cup applesauce for half of the margarine. no need to add liquid; they were wonderfully light and fluffy. Just don't over mix as with any muffin.

Black Beans a la Olla

This was okay. It was a lot thicker than I expected. I guess that's how people are able to make it into burritos the next day. I will try that tomorrow. I only put one onion, and it was a lot!
