Glorified Hash Browns

I love the cream cheese in this recipe much better than the normal sour cream. I added diced chicken and some green pepper to make it a complete casserole.

Eclair Cake

I love cooking with my young granddaughter (9) and this is one of her favorites. We add a package of softened cream cheese to the filling for a really rich flavor. This is a hit at pot lucks, bible studies, and church functions.

Cottage Cheese Chicken Enchiladas

Double enchildada sauce, feel free to mix filling ingredients together (chicken and cheeses), much easier to assemble and tastes great. Was a hit at church pot luck, I used mild green chili enchilada sauce.

This is a great recipe for kabobs alternated with pineapple chunks. I cut meat in 1" chunks and then marinated just over 24 hours.

Chicken Noodle Casserole II

I used: fresh chicken breast cut, cooked with onions and seasoned with paprika. Used 3 cans of soup and one can of milk. Used more noodles crushed (12 oz.). I baked covered for 30 minutes then uncovered, added crackers and cheese and baked 10 more minutes.

Classic Stuffed Peppers

Finally a recipe like my mother made! I doubled the recipe. I used very inexpensive spaghetti sauce and it was wonderful. I did season the meat with salt, pepper, and basil. I did not put the meat to the top of pepper, I left room for sauce to sit on top plus cheese. I did put additional sauce on bottom of pan which steamed the peppers nicely. Thanks for sharing this recipe, will definitely use again.
