Pizza Dough I

Perfect! Use if for chicago style deep dish pizza in a casserole dish and it is wonderful! I cover the dough with a moist cloth and let it rise for about 20 minutes.

Apple Enchilada Dessert

The apple filling I used was good and we love brown sugar and cinnamon, but I think it would have been much better with pie crusts/dough. The tortillas made this dessert a little plain. It is very easy to put together, but out of 6 of us, none of us liked the end result. It was also too buttery and I don't think water is needed. It would have been better gooey instead of runny. Sorry.

Brunch Enchiladas

***With very few changes it's 5 stars!*** This was awesome! And wonderful to have all prep work done to just simply throw in oven Christmas morning! I made very few changes: I doubled the liquid mixture so that it completely covered the tortillas/enchiladas as another reviewer suggested, substituting green onions for a small yellow onion instead. Adding this additional liquid mixture was definitely a must! But because of this, more liquid to cook, I ended up keeping it in the oven probably another 30-45 minutes. Also, I put a ton of cheese on top and baked after that for about 10-15 minutes instead of the cook's suggestion for only 3. This was really very good and we will definitely make it again! Thank you so much for such an easy, crowd pleasing meal! It was incredible!

Slow Cooker Chicken and Dumplings

This did not turn out well or tasty for us at all... I am sorry. There was way too much dough and with processed food as the base (cream of chicken soup) it was way too salty and tasted unhealthy. This would have been a lot tastier if the base was made from scratch. The chicken was way over cooked and turned out tough and chewy. My son came home from school and asked me to make chicken dumplings because the school's tasted so good. He didn't like this at all and neither did my husband or three other kids. I am sorry, but you might as well buy it frozen if this is the recipe you're going to use. We will not make this again. Really sorry I couldn't give great review.

Pumpkin Chocolate Chip Cookies III

I nearly doubled the recipe so that I could use the whole can of pumpkin. Ended up using two eggs, which made them real soft and cakey. These were delicious! We ate half the batch before we were done! Omitted walnuts and used what little chopped pecans I had left. Wonderful! Thanks!

Wild Rice Stuffed Acorn Squash

This was a really great idea, but they would taste much better with homemade stuffing... it lacked flavor with the box. Also, this recipe made more than enough stuffing for the squash... I froze a whole tupperware full of the stuffing that was left over . We really love stuffing and squash both; it just didn't work with store bought box stuff. Sorry.

Green Beans with Hazelnuts and Lemon

I didn't measure anything, just eyeballed, and added lots of lemon zest and this is definitely my new fave way of making green beans! Also, our store didn't have hazelnuts so I used sliced almonds. Delish! Thanks!

Green Chile Chicken Soup

Its very good, but more like a chowder than the green chile chicken we are used to in New Mexico. It is a cream based soup, very heavy and lots of butter. Like I said, very good, but this isn't a light, healthy stew.

Strawberry Pretzel Salad

This was fun to make with the kids... very easy and they enjoyed helping. The crust and the middle was good, however... the top was not at all. We didn't like the idea of whole strawberries, so we mashed them up which made it better, but out of 6 of us, only 2 liked the dessert as a whole. I think, for us, it was just a weird combination. I'm sorry. I think with a different topping...? Thanks for the recipe, though.

Refreshing Cucumber Lemonade

Overall too strong... too sweet and too sour. Adding water didnt help. I threw it out. Also, really bummed that so much of the cucumber is wasted... an awful lot of pulp and nothing to do with it in this recipe... my daughter says she'll make bread with it :)
