My name is Heather. I live in a medium sized industrialized town on the Gulf Coast in Texas with my husband and our two children.
My favorite things to cook
I love to cook good old traditional Southern cooking. I also love Italiano and Mexican food. Mostly Southern comfort is where my base is... however, I am delving more into the healthier staples everyday. I really like simple, classic meals but am perfectly capable of pulling off a perfect souffle and pie crust, not to mention any cake to die for.
My favorite family cooking traditions
Well, my mother makes the best gumbo you will ever have in your life. Sometimes I'm tempted to post it and maybe I will but for now we'll keep it to ourselves. Lots of southern comfort in our family. Fried chicken, chicken fried steak, creamy mashed potatoes. Porcupine meatballs. Ain't nothing wrong with that.

Beth's Spicy Oatmeal Raisin Cookies
These are my favorite oatmeal raisin cookies. From time to time I leave the raisins out or add milk chocolate chips. All variations are received very well.

Eileen's Spicy Gingerbread Men
I LOVE this recipe. I made it last year and I am making it again this year, but I will be making a few changes to soften it up a bit and make it a little chewier. I will be adding an extra egg yolk and subbing bread flour for half of the flour total. I am subbing brown sugar for all of the white sugar and using an extra quarter cup of shortening. The shortening will make up for the extra moisture/fat that the bread flour will need and will make for a little more cake-like cookie. The extra yolk and bread flour will amp up the protein making a chewier cookie.
