Thai Chicken Pizza

Would like to make my own peanut sauce, but local markets do not carry all ingredients needed. So I tried this one. Really good and my hubby chowed down. Changes: made my own crust with half whole wheat, precooked it on grill, also had some pre-shredded carrot/broccoli/cabbage salad mix, so used that in place of carrots. Only had mozzarella. Also skipped the extra peanut butter. Made an 15 inch pizza, and cooked it as well on the grill. Will definitely make again!

Grilled Chicken Thighs Tandoori

Okay, we LOVE Indian food. This had some excellent spices to it, but it lacked the kick we are used too. I will make this again, but will add some cayenne pepper and maybe more ginger. Tumeric might be added as well. But, the overall taste was very authentic.

Barbeque Halibut Steaks

Wish I could give it 6 stars, and wish I had taken a photo of this dish, but my boys ate it before I could grab a camera! Easy quick prep and cook, perfect for any working wife just wanting to put a healthy meal out for her family. I might try a bit of marination, but otherwise would not change a thing! Totally disagree with the negative comment. Maybe she had bad halibut?

Seasoned Swai Fish Fillet

Hubby, son and I all liked it. I would put more cilantro in next time. I used more garlic and I also would consider cayenne pepper in place of paprika for a little more zip.

Saucy Chicken and Asparagus Bake

Made this tonight for my son and husband. The reason for 4 and not 5 is that they felt smaller pieces of chicken would be better. Either way it was tasty and very easy to make. Will make this again, especially since we have asparagus in the garden and continue to look for good recipes for asparagus.

The Best Rolled Sugar Cookies

Okay, this is the second time to use this recipe. This time they were outstanding. The texture perfect and taste "to die for". Advise for first time, do use parchment paper. Keep all dough not being rolled in fridge. I put scraps in freezer to insure coldness. Watch cookies carefully. Best recipe for large cookie cutters without a lot of detail.

Roasted Beets 'n' Sweets

Perfect veggie dish. Great fall side dish. I did also add carrots, cooking them with the beets. Otherwise I found recipe ingredients were a good blend.

Seafood Creole

Absolutely wonderful recipe. Due to kitchen cupboard supplies, I used 16 oz of my home canned tomatoes to replace sauce and tomatoes and did not use the chicken stock due to liquid. Just about perfect 'heat'!

Thai Curry Soup

Of all the ethnic recipes I have tried on this site, this one was truly outstanding! My hubby loved it! Like we all do, I tweaked a little. I served it as a main dish so I doubled the shrimp. And because we love it spicy, I added a teaspoon of curry powder and a sprinkle of red pepper flakes. This one goes on my repeat frequently list!

Grill Dough

Okay, in the interest of health, we use whole grain whenever possible. Was a little crispy and dry after cooking. I did pre-grill one side as per others. Used pesto toppings. Took a little longer than mentioned and I slid the first pizza onto the other unlit side to complete cooking. Next time I will do 1/2 white and 1/2 whole wheat flours. I think I also would add some seasonings to it as others have mentioned.

Uncle Dank's Gumbo

I have wanted to try gumbo since our trip to New Orleans. This was my first try and it was definitely worth the time and effort. The roux worked out very well despite the negative comments of some, nice deep brown and tons of flavor with the 30 minute stir. I also threw in some small scallops. My only change for next time would be a bit more spice, it wasn't quite spicy enough. But a great recipe.

Clone of a Cinnabon

Please use the hint to turn pan over when you finish baking. I wish I had read that before I made these. Still yummy though. Icing is to die for!!
