Cheesy Ham and Hash Brown Casserole

Adding chopped onion, red and green peppers to this gives it what it is lacking. Saute veggies before adding. Make sure you bake for 1 hour at least, otherwise everything comes out undercooked. I am only giving this three because my husband and I thought it tasted soupy. And yes, we did use condense soup. I am also not a huge fan of the diced ham, I would have preferred it without just as a cheesy hash and veggie casserole. I am a meat eater, so I mean it when I say this.

Tres Leches (Milk Cake)

Disclaimer: If you do not like ULTRA sweet cakes, this is NOT for you! I had never made Tres Leches, so I was not aware of how intensely sweet it would be. It is a very delicious cake and easy to make, but next time I am absolutely going to cut down on the sugar. I would recommend cutting the sugar for the whipping cream in half because the sweetened condensed milk already gives it enough. I made the cake the night before, poured the milk over it early morning, chilled it covered in the refrigerator all day and a few hours before dinner added the whipped cream, and chilled it again. I used coconut milk instead of regular milk, and added coconut shavings to the top. This added very good flavor.

Easy Sugar Cookies

Honestly, these are the best homemade sugar cookies I have yet to taste! I absolutely the advice of the reviewer who said to MAKE SURE your butter is extremely soft before mixing with sugar. I also added an extra half tsp of vanilla. These taste like they are from Pot Bellies! VERY GOOD, not messy at all, and easy to roll. I highly recommend!

Chicken Enchiladas I

VERY good recipe. I heeded the advice of omitting water, and I am glad that I did! There is simply no need for it. I spruced up my tomato sauce with finely chopped jalapenos in addition to recommended ingredients. I still had half of a can left, so instead of tossing it I added taco seasoning to it with a few dashes of cayenne, cumin and sugar to make my taco sauce - it was perfect! The jalapenos give it a kick, which my husband and I like. I made this three days ago and reheated leftovers for lunch today...still good!

Chicken Pot Pie IX

I made as is, but started cooking the onions in butter while the chicken/veggie mixture boiled - saved on time! Very delicious and tastes great reheated!

Chocolate Chocolate Chip Cookies I

My husband has officially dubbed these as the best cookies I have ever made! I used half butter and half shortening which gave them the perfect consistency. This may sound too sweet for a few of you - but I actually added 2 tablespoons of brown sugar to this recipe. I felt like it needed a little boost - and they turned out great! 10 minutes is the perfect amount of time. They are still soft and chewy with melt in your mouth chocolate chips the next day!

2-Step Inside-Out Chicken Pot Pie

I really want to like this recipe, but found it very lacking. I think that fresh vegetables would help a great deal and that seasoning and chicken broth are absolutely necessary! The condensed soup does not provide enough moisture for the chicken/veggie combo to "simmer". It is my fault for using poor quality biscuits, which did not help matters. Though this is easy, it needs lots of improvement in order to be tasty.

Awesome Slow Cooker Pot Roast

I made this recipe with a pot roast just under 2 lbs. I used just one can of soup and the entire package of dry onion soup mix. I also mixed a beef bouillon cube with some water in the pan I used to sear the roast, and added it to the crock pot. This gave it some great flavor. However, I like saltiness, so if you want to tone it down I would use only half the package of dry soup mix. I suggest adding veggies with about 3-4 hours left (carrots, onions, potatoes) - otherwise they will get mushy. I slow cooked for 9 hours alternating between low and warmer setting because my crock-pot's low setting is VERY hot. DELICIOUS dish, will absolutely make again!

Italian Sausage Lasagna

Though this tasted great, but I think the cooking instructions could use a little improvement. I doubled the recipe, and found that I could have easily added one more can of diced tomatoes, and another sausage. To improvise with what I had, I added a small 8 oz. can of tomato sauce, and had to sparsely spread the ricotta/egg/parsley combo. I also found that I needed to bake the lasagna for at least another 10 minutes for it to be cooked to perfection. Will definitely use again, but with modifications.
