Decadent Pumpkin Muffins
I used about 1/8 of a cup of white sugar, 1 cup of dark brown sugar, 1/3 cup plain yogurt with 2/3 cup vanilla yogurt(just based on what I had in my fridge), added vanilla, pumpkin pie spice, nutmeg and cinnamon. They seem rubbery right out of the oven and the taste is subtle yet good. I am hoping they will be more "specatacular" tomorrow morning. These aren't nearly as impressive as my cream cheese filled giant pumpkin muffins but they were also less labor and ingredient intensive, and also better for you. Will try with white whole wheat flour next time.

Chococonut Chip Cookies
Good cookies- made a few adjustments based on reviews and what I had on hand. Used 1/2 cup dark brown sugar, 1/2 cup white sugar, toasted sweetened coconut flakes. and 1 tsp coconut extract. They were just a tad too "cake like" for my taste, I like flatter, gooey cookies. But good overall!

Magic Cookie Bars from EAGLE BRAND(r)
Graham cracker crust needs to be doubled to fit well in a 13x9 pan. I doubled it and ended up then doubling the amount of sweetened condensed milk as well because I thought they were going to turn out "thin" overall. They turned out great! Used both semi-sweet and butterscotch chips.
