Cowpoke Beans

I love these beans! I never seem to have the marjoram on hand, but I use all the rest of the ingredients mostly as measured. If I happen to have a ham bone, I'll use it and chunks of ham instead of bacon. I also add a jalapeno when boiling for more flavor with a kick. The secret is the added tomato mixture and letting the flavors meld together. We make a meal out of it with cornbread on the side. NOTE: This is not a chili recipe, so you'll have to hunt the website a little longer if that's what you are looking for. These are just good old fashioned Southern comfort food.

To Die For Blueberry Muffins

LOVE these muffins! I like to make a separate bowl of batter so I can make one with blueberries, and the other with cinnamon (1/2 tsp) and apple (1 grated apple = 1 Cup). These muffins can get dry quickly, so if you have enough to last more than two days, freeze the others to keep them moist. The crumble topping was enough for me to use on 24 muffins. I kept the extra crumble in the fridge to use the next time I made them.

Slow Cooker Cilantro Lime Chicken

This was a HUGE hit at our house. The first meal was hard tacos for my husband and burritos for the rest. The next two meals were chicken enchiladas on corn torillas. Enchiladas were the favorite way to fix this. So many ways to use this as filling! I did add extra cilantro, as suggested, and I dumped in a bag of frozen Mexi Mix veggies (corn, black beans, peppers, and onions). I also added about 1/2 - 3/4 Cup chicken broth so the leftovers wouldn't dry out.

One-Pot Stuffed Pepper Dinner

My family really enjoyed this. My son would have liked a few less tomatoes, so next time I'll try a 15 oz tomato sauce in place of one of the diced tomatoes. One pot -- less mess! Good stovetop recipe.
