Figs with Goat Cheese, Pecans and Bacon

Blueberry Pancakes

These were great, and loved by the kids. I used half whole wheat, and diced strawberries (what I had on hand), and I followed another reviewers suggestion and increased baking powder by 1/2 tsp. The batter is thick, but they cook fine. You can spread the batter a little with a spoon, and press down gently with the spatula when you flip them if you are concerned about them cooking thru.

Cream Cake

I doubled this recipe for a layer cake, added 2 ground vanilla beans (because my hubby *loves* vanilla) and increased the baking powder by 1/2 tsp (1/4 for single recipe) per other reviewers suggestion. It came out amazing! It would be just fine without the added vanilla bean as well.

I used half whole wheat flour and they still came out great. Only baked for 6 mins in my oven. My oven would only hold one pan at a time, so I kept the batter in the fridge between batches.

Enchiladas Suizas

Loved this! Just enough kick and full of flavor. I didn't have enough green chilis, so I used what I had and then some chopped bell pepper. I thought the garlic and cumin were just right. Made this with pork. I will probably never use red sauce for my enchiladas again! Thanks!

Benji's Pork Chops with Grapefruit Relish

The relish is great, but the chops were dry. I had grapefruit juice and oranges, so I used grapefruit juice instead of OJ for the brine, and orange sections instead of grapefruit for the relish.

Spinach and Bacon Chicken

This was a 5 star with the following changes: added salt, pepper, and garlic powder to the flour, and minced garlic and chopped green onions to the pan just before adding the wine. Also cooked the sauce uncovered to help thicken.

Spicy Sweet Potato Soup

My husband and 9 month old loved this! Since I was giving some of this to my 9 month old, I left out the red pepper flakes until after I blended the soup and removed some for him. Still had great flavor. I also sub'd lemon for lime and plain yogurt for sour cream.

Wedding Cake Icing

This was perfect! I needed a thick, rich frosting for a friend who is allergic to dairy. I used butter flavored crisco and almond milk instead of water. Thanks for the instructions to mix for 5-10 mins. The consistancy was perfect!

Gluten-Free Yellow Cake

Great texture and flavor! I did follow the advise of another reviewer and put a bowl of water in the oven and let the rice flour sit in the milk while mixing the rest. I substituded soy flour for the tapioca flour and used guar gum instead of xanthan gum. I also substituted applesauce for the mayonnaise and it turned out beautifully. Also works well if you had 1/2 cup cocoa to make it chocolate. No need to add extra sugar.

Smothered Filet Mignon

I am not an accomplished chef with steak, but with the directions here, the steak turned out amazing! We used sirloin and still had great results. If you are not a blue cheese fan, feta also works well. The directions on how to cook the steak made all the difference for me. We just made this for friends and it was a big hit

Sturdy Whipped Cream Frosting

The flavor is great - not to sweet, not to bland. It did not turn out good for piping. I followed the directions and then put the frosting in the fridge until my cake cooled, and it was very runny. It does firm up if you leave it sitting at room temperature, but I agree with previous reviews - it is heavy on dairy products and should not be left out for long periods due to the dairy products spoiling.

Great flavor, very rich. The directions about not opening the oven were great. I cooked mine in an 8" pan and had to turn the (convection) oven off 15 mins early because it was browning.

Hot Fudge Sauce

The flavor is great, but the sauce cools very quickly and becomes difficult to serve. Even keeping it on the stove on low heat requires constant stirring. Maybe that's just the nature of fudge sauce.

Vegan Cheesecake

I made this for a friend who has a list of 72 severe food allergies. I used almond milk instead of soy, omitted the sugar, and used honey instead of maple syrup. The flavor was great, but the consistency was more of a custard, and almost half the volume was lost during baking.

Surprise Cake

My husband loved the consistency of this cake. Very easy, and it turned out beautifully. I used the Cream Cheese Frosting II recipe from this site and it made a great combination. Next time I will use more cocoa - 1-2 tsp, but my preference is for rich chocolate.

Kai Kang Dang (Chicken Curry with Coconut Milk)

I agree with some others that there is to much coconut milk. Next time, instead of the 2 cups of coconut milk, I'll use chicken broth. I used mushrooms, spinach and bell peppers and other than being too sweet it worked well

Fig and Ricotta Crostini

I agree with some others - this is rather bland. Maybe some cinnamon mixed into the ricotta would liven it up?? Any other suggestions welcome as I would like to see this idea work.
