Dietetic Banana Nut Muffins

These are really good and moist. I might experiment next time with adding a little more banana or a touch of brown sugar splenda; but I have to say, as is, it's a very good recipe.

Whole Wheat and Honey Pizza Dough

This was really good. I've made it twice now. The first time it came out a little undercooked, even though I followed others' advice to bake it longer. The second time was perfect though. I baked it 20 minutes, then added the toppings and baked another 15. This would be delicious on it's own, I'm thinking about trying to make bread sticks out of it next time.

Portobello Mushroom Lentil Soup

I've been trying a lot of lentil recipes lately because my family is trying to eat cheap and healthy meals. This is one of my favorites. I usually don't like soups very much, but I did like this. It doesn't need the sherry though.

Mexican Bean Burgers

I think these are great. I've made them twice. The first time I cooked them in the skillet according to directions, but they turned out mushy was the only problem. Then I tried baking them according to directions and they still turned out mushy. You definitely need to flip these halfway through baking and I would recommend at least 15 minutes on each side.

Apple Cinnamon Muffins

These are moist and really tasty. I added a 1/4 cup milk to the batter and for the topping I used the splenda brown sugar blend instead of regular splenda.

Garbanzo Bean Chocolate Cake (Gluten Free!)

This is a delicious flourless chocolate cake. People seemed to really enjoy it whether they are on a g-free diet or not. This was a dense and moist cake. To serve 12 people the serving sizes are pretty small, but it's rich enough that it seems ok. I followed the recipe exactly (using 2 cups of garbanzo beans as I could not find a 19 oz can). Some people have mentioned making additions or substitutions, but frankly, it doesn't need it. I don't plan to make any changes the next time I make it. The only thing I changed was the topping. Just confectioners sugar sounded a little plain. I topped it with chopped pecans and drizzled caramel over the top. It was great!

Imitation Meatloaf

This was good. The texture and and flavor is very close to that of real meatloaf. It was pretty dry as leftovers though. Even so, I'll probably make it again because it's a good healthy and cheap meal.

Vegetarian Oven-Baked Brown and Wild Rice with Eggplant

This was decent. I made a few changes: excluded the onion, substituted kidney beans for red bean, substituted cumin for turmeric, added cheddar cheese The rice and yogurt mixture was a little bland. If I make this again I'll definitely use the onion and probably add a little more spice. I think the cheese was a necessary addition though. Overall, I think this is a good solid, healthy vegetarian meal.

It wasn't bad, but it wasn't great either. It was pretty bland. The second time I made it I tried doubling the spices, but it didn't seem to make any difference.
