Creamy Chicken Gnocchi Soup

This was delicious! Even better the next day as the gnocchi soaked up all the flavors of the soup. I did make a few modifications though since I didn't have zucchini or rotisserie chicken. Instead, I boiled some chicken breasts and used the water that they were boiled in for the chicken stock. I also added some mushrooms, garlic powder and basil and used 2% milk instead of fat free half & half. I took Kristin's suggestion and served with pesto bread sticks and it was a big hit! Definitely will be making this one again!

Easy Canned Venison

This is a great simple recipe for canning venison. However, I don't normally put anything but salt and pepper in my jars when I can it. I don't even season the meat before I pack the jars either. The venison rarely needs any extra seasonings at all as its delicious all on its own. If you want to season it, I would season it when you cook it rather then when canning it. Also, I don't have a pressure cooker so I water bath mine for 3 hours instead.

Split Pea Soup

Man, this was good! I added about an extra cup of chicken broth as I don't like my pea soup as thick as others do. I also seasoned with some garlic and onion powder and a bay leaf.

Garlic Cheddar Chicken

This was awesome. Even my live in food critic had 3 helpings. Next time I think i'll experiment a little with the breading. I used Italian seasoned breadcrumbs but i think i'll try Panko or cheese-nips or maybe both next time.

Stuffed Mushrooms

This was so yummy! The balsamic vinegar really is what does it! I doubled the recipe and used it with portabella mushrooms and grilled them for about 6-8 minutes. Fantastic!

Buffalo Chicken Pasta Salad

I think this recipe would really depend on what kind of buffalo sauce is used. I used Frank's Red Hot and it was more heat then flavor. Also, next time I think i'll use shredded chicken instead of cubed. Use more mayo and a mix between blue cheese and ranch. I bet crumbled blue cheese would be good in it too.

This is now my favorite meatloaf recipe. It turned out nice and moist with great flavor! I split the cup of sour cream with some bacon ranch dressing and used a little more Worcestershire sauce then the recipe called for but that was it!

Cream of Tomato Soup with Pesto

Such a yummy soup! Heres what I did different: I cooked some onion and garlic in the pot before adding the chicken broth. Let that simmer for maybe 15-20 minutes or so. I then added a can of homemade tomatoes and a can of condensed soup. I let that simmer for another 10 minutes to let it thicken up. I ran it through the blender to take out the chunks and then added the half and half. I also used much more pesto then what the recipe calls for. I stirred it right into the pot rather then spooning it out into the bowls...probably about a 1/4 cup or so. Turned out delicious! I served it with toasted chicken salad sandwiches for lunch.

Leddie Chicken

The simplicity of this recipe is what makes it so great! I used cream of chicken instead of mushroom because I didn't have any and it still came out great. Make good gravey for the garlic mashed potatoes I served with it! Enjoyed by all.

Catherine's Spicy Chicken Soup

WOW! I love this soup. I followed the recipe pretty much exactly, except I used my own quart jar of homemade canned tomatoes vs the whole/diced cans of tomatoes. I also left out the chili beans since I don't like them. Also, I took advice from another reviewer and served with cornbread muffins. Delicious! Will definably be making this one again!

Mama's Best Broiled Tomato Sandwich

I can't get over how wonderful this recipe is. Only thing I do different is I broil it until the cheese is melted on the top(60-90 seconds). 5 minutes is WAY to long!

Marinated Tofu

Loved the idea of this recipes since it's so simple. I marinated to tofu overnight and added some granulated garlic and course ground black pepper. The flavor was AMAZING! I would recommend using extra firm tofu for this and maybe even if you have frozen tofu, to defrost it and use that kind. Tofu that has been frozen tends to stay together better!
