Sky High Yorkshire Pudding

Loved this recipe. I have to confess though, I added a tsp of salt to my flour before adding my milk and eggs...and they were fan-fricken-tastic! Thanks for a genius yorkie recipe!

Brown Rice and Black Bean Casserole

Reviewed: Mar. 16, 2009
Just loved this dish. It was a lot of work, but I enjoy cooking and didn't mind the prep. The best part of it all...my boyfriend went back for thirds and since I made it 3 weeks ago, he has asked me to make it 4 times since! I made it just as the recipe states, and I wouldn't change a thing!

PHILLY Chocolate Turtle Cheesecake

Reviewed: Jun. 16, 2009
I made mine with a vanilla wafer base, by crushing 1 1/2 cups of vanilla wafers and mixing it with 1/4 cup of melted butter. I pressed that into a 9x3 springform pan. Once I poured my caramel mixture over the base I sprinkled the top caramel layer with 1/2 cup chopped pecans. I prepared everything else as directed and baked with a casserole dish on the bottom rack, filled with water, to prevent the top of my cheesecake from cracking. Once baked and cooled and the rim had been removed, I drizzled on some store bought caramel sauce and hot fudge sauce, in a decorative fashion, the sprinkled on another 1/2 cup of crushed pecans. It was a HUGE HUGE hit!

Apple Bavarian Torte

Reviewed: Jan. 15, 2010
Just awesome. The only alteration I made was to have the crust come up the sides of my pan an inch, other than that, I didn't change a darn thing and next time I make it, the only thing I will change is how much I make...soooooo good! So very very good! Oh, and I used Granny Smith apples. Yum!

Not too bad for throwing this together, next time, no mint extract...just the chips...OR, just the extract and no mint chips. Also, bake for 35 minutes!

Krazy Garlic Trout

Reviewed: Jun. 16, 2009
This was a super easy recipe to put together for my boyfriend. I followed the recipe exactly and in the end, my boyfriend said that he couldn't taste any of the garlic. Apparently, it was over shadowed by the jalapenos. I don't like trout, but my man really does and next time, I will be tweaking the recipe a bit. I am going to double up on the garlic. Half the garlic will be sauteed with the jalapenos and onions, along with some parmesan cheese and a tbsp of butter. When I place the trout in the foil, I will place the sauteed mixture on top and allow to dribble off the fish. Then, I will place the required butter and the other half of the garlic, which I will have crushed, on top of the trout and then I'll wrap it all up neat and tidy in the foil packet and bake for the 25 minutes that you suggested. Hopefully, that will make him happier...and thank you so much for this recipe...it has great potential to build off of!

Chocolate Pecan Pie IV

Reviewed: Oct. 13, 2009
As far as taste is concerned, this was a 5 star...BUT, I found that the directions were lacking. You say to mix with a hand mixer, but for how long? Till what consistency? I mixed it long enough for the batter to rise and be smooth, not really runny...when I stirred my pecans in like directed, they sank straight to the bottom. So, I ended up putting in more pecan halves and poked at them with a toothpick until they went just ever so slightly below the surface and then baked as directed. If I hadn't have done that, then it would have looked like a Chocolate Pie with a pecan surprise at the bottom, rather than looking like what it was supposed to be. Other than that, like I said, it tasted brilliant but the directions are lacking too much for me to give this a five star! If it was up to me, I would mix until well beaten and smooth. Then I would pour pecan pieces in to just cover the batter, followed by the remainder of the batter. I would then pour on the pecan halves and lightly poke them to just below surface level so that you can still see the pecans clearly and then bake. I will definitely use this recipe again!
