Orange, Honey and Soy Chicken

Reviewed: Mar. 11, 2014
This was good, although it seemed to be missing something. I'm going to try it again, though. The kids ate veggies with this, so that's a win to me. I did use cornstarch to coat the chicken, and added onion powder. This is worth making. It should be easy to adjust ingredients to your liking. Maybe some 5 spice powder would round this out, if you have it. Thanks to April for the recipe!.

Easy Garlic Broiled Chicken

Reviewed: Mar. 8, 2014
We liked this chicken a lot. It is simple, and easy to prepare. Per another couple of reviews, we subbed balsamic vinegar for half of the soy sauce (gf tamari in our case), and added some dried rosemary. We used a few thinly pounded breasts and several drumsticks. It baked for 40 min at 350. This would be great with mashed potatoes or rice. I enjoyed mine with parmasean crusted zucchini fries. My husband asked me to bookmark this recipe, which is fairly unusual. Thanks for a great recipe. Oh, as for those who hate reveiws where the recipe has been altered, please understand this: I change most everything I make just a bit to suit our needs and/or tastes. I will continue to reveiw in order to show appreciation for those who took time to share recipes, and hopefully to help others here and there.

Apple Crisp II

Reviewed: Sep. 19, 2012
We liked this. I had some gala apples that were a week or two old. They stayed solid but were soft enough for my little one.The top turned out kind of like an oatmeal cookie. Soft and yet crumbly. Made it gluten free by using GF oats & GF oat flour plus xanthan gum for cohesion. I also added nutmeg. Will probably make this again, upping the oats to 1.5C and lowering flour to .5C. Thanks for the recipe!

Peanut Butter Banana Muffins

Reviewed: Mar. 15, 2011
Very moist, nice mild bananna and PB flavors. I was able to use a gluten free flour blend with great results (dense but not crumbly). I did add stevia to help with sweetness since 1/3 C isn't alot. I feel like these are a great snack or quick breakfast that isn't too junky. Thanks for the recipe!

Enchilada Meatballs

Reviewed: Dec. 1, 2010
This is a great meal! It is simple, and easy to make gluten free. We use all ench. sauce rather than tomato sauce, add taco seasoning, and corn chex due to time constraints. What a great meal idea!! thanks for sharing!

Oh-So-Good Chicken

Reviewed: Nov. 10, 2010
I made several adjustments to suit our tastes(taco seasoning as the chicken cooked, brown rice, caramelized peppers/onions instead of mushrooms, and rotel rather than salsa). This was a quick, easy, gluten free meal. Thanks! PS I actually ate the leftovers. That is unusual!

Garlic Roasted Chicken and Potatoes

Reviewed: Nov. 9, 2010
This is a very mild dish. I added a few carrots, an onion, and replaced the legs with tenders because we won't eat dark meat. Tenders also cook faster than bone in meat. If we make this again, I will try some sweet potatoes, a side of butternut squash and more spice for the meat. As an aside, this is naturally gluten free if you use GF spices, and so forth. I love recipes with simple, natural ingredients. This was quick to assemble, and I was able to make a batch of No Bake Cookies V while it baked. =)

Boston Baked Beans

Reviewed: Nov. 2, 2010
This is just the taste that I had been looking for. They are adequately sweet and not too tangy. I like to reduce the molasses and replace the sugar w/ stevia to make them healthier, as well as use canned white beans for ease of prep. This is a great recipe, and adaptable as well. Thanks for sharing it!

Apple Oatmeal Cookies I

Reviewed: Oct. 23, 2010
This recipe was just what I needed. We are GF, and SF so I used Pamela's for the flour, GF oats, etc., and a combo of xylitol and stevia for sweetener. Also subbed butter since I do not keep shortening. They do spread a bit more with butter, but the flavor is still good. Not overly spiced nor too apple-ish. Thanks!!

Quick Quiche

Reviewed: Oct. 23, 2010
Quick and easy recipe. This also converts well to GF using Pamerla's, or a blend of rice flour, tapioca, & xanthan.
