Peanut Butter Banana Muffins

Very moist, nice mild bananna and PB flavors. I was able to use a gluten free flour blend with great results (dense but not crumbly). I did add stevia to help with sweetness since 1/3 C isn't alot. I feel like these are a great snack or quick breakfast that isn't too junky. Thanks for the recipe!

Enchilada Meatballs

This is a great meal! It is simple, and easy to make gluten free. We use all ench. sauce rather than tomato sauce, add taco seasoning, and corn chex due to time constraints. What a great meal idea!! thanks for sharing!

Oh-So-Good Chicken

I made several adjustments to suit our tastes(taco seasoning as the chicken cooked, brown rice, caramelized peppers/onions instead of mushrooms, and rotel rather than salsa). This was a quick, easy, gluten free meal. Thanks! PS I actually ate the leftovers. That is unusual!

Garlic Roasted Chicken and Potatoes

This is a very mild dish. I added a few carrots, an onion, and replaced the legs with tenders because we won't eat dark meat. Tenders also cook faster than bone in meat. If we make this again, I will try some sweet potatoes, a side of butternut squash and more spice for the meat. As an aside, this is naturally gluten free if you use GF spices, and so forth. I love recipes with simple, natural ingredients. This was quick to assemble, and I was able to make a batch of No Bake Cookies V while it baked. =)

Boston Baked Beans

This is just the taste that I had been looking for. They are adequately sweet and not too tangy. I like to reduce the molasses and replace the sugar w/ stevia to make them healthier, as well as use canned white beans for ease of prep. This is a great recipe, and adaptable as well. Thanks for sharing it!

Apple Oatmeal Cookies I

This recipe was just what I needed. We are GF, and SF so I used Pamela's for the flour, GF oats, etc., and a combo of xylitol and stevia for sweetener. Also subbed butter since I do not keep shortening. They do spread a bit more with butter, but the flavor is still good. Not overly spiced nor too apple-ish. Thanks!!

Peanut Butter Bars IV

These turned out great. I was also able to make this gluten free and lowered the sugar. I used a mix of 3 parts millet flour to 1 part each of tapioca flour and sorgum flour. I used a small amount of choc chips in the batter, and skipped the frosting. Thanks for submitting the great recipe!

Chocolate Chip Cookies (Gluten Free)

These were a great texture. I did chill the dough for about an hour, and they did not spead much at all. My hubby said they look like store bought. Used GF Panty AP flour, and made sugar substitutions as well. Also used a couple of eggs rather than egg replacer. In short, this is a wonderfully adaptable GF recipe. I bet it is phenomenal with real sugar! Thanks for the great recipe. =)

Taco Casserole

We enjoyed this recipe. I agree with previous reviewers : you don't need to bake it for the full time. I think we baked for 20 minutes, just long enough to brown the cheese. I almost skipped the crushed chips on top, but I am glad I didn't since they add a great corn crunch that really works well with this casserole. We will keep this as a dinner option for busy nights. Oh, and I used ground chicken breast instead of beef. If you are used to ground chicken in other recipes, you will love it here. This is an easy, quick and tasty dinner. Thanks for the recipe Debi!

Lime Chicken Soft Tacos

We liked these! However, I agree that the recipe does *not* feed 10 people. I would say two tacos per person for a net of 5 people...unless you have a big meat eater or bigger appetites. I know some say oregano is too italian for this dish. I disagree, since you'll find it in lots of mexican dishes. We did add cilantro as well. This dish felt more like Miami than Mexico to me...If you are looking for more of a fajita flavor , you could add cumin, chili powder, and onion powder, but that would be a new dish! We enjoyed this as is. Thanks for the great recipe!

Best Ever Meatloaf I

This is a great recipe for meat lovers. The loaf held together fairly well. The hubby liked it. However, if you are like me, and need to really doctor up meat to enjoy it, you might want to make some adjustments or keep looking. I used to have a recipe that I liked, but the little one can't eat it. I will keep looking, but again, it's all just preference, and this is a great meat lovers loaf!

Easter Breakfast Casserole

Yum! Very good - even without the bacon. After reading several reveiws, I decided to start my potatoes in a skillet so the onions and peppers could saute as well. Since I don't keep hashbrowns, I used a bag of tater tots and broke them down to bits with a firm spatula as they sauteed. The whole family liked this a lot!

Oatmeal Strawberry Bread

Yummy! We made this close to the original recipe (subbed oat flour and reduced the sugar per our habit). It was delicious, moist, and still addictively sweet with lowered sugar. Like others said, this recipe is a great way to use well ripened berries. We love it. Thanks for sharing your wonderful recipe!

Zucchini Nut Cookies

These are addictive! I left out nuts and rasins, subbed 1/2 the shortening for butter, and used ww flour..oh, and I added vanilla. My 1 yr old signed "more" for the first time ater a test bite of this cookie. I loved them , too! Thanks for a great recipe!

Zucchini Pancakes

What a great way to use up zucchini! These were quick and easy to make. I subbed ww flour, shredded onion & garlic powder, using the rest of the ingredients as written. Mine came out a bit soggy, and took a while longer to cook, but I also threw this together last minuite while doing several recipes at once...so it coule be my error - thus 5 stars rather than 4.

Maria's Pepper Steak

We used left over steak, and made the sauce as written. It was VERY GOOD! I even took seconds....which is rare for beef items. This recipe is simple, fast and great tasting. Thanks Maria!
