Chocolate Chip Banana Bread II

This is good, moist and tasty, but it's definitely more cake-like. If you're wanting an afternoon "something" with that cuppa, then you won't be disappointed. I sprayed my tins with pam and I had no trouble getting them out of the pans; they literally just slid out. I did substitute butter for shortening and halved the butter quantity by half and used half apple sauce - wondering if that made it cake-like? No other problems, loaves held their shape up nicely when cut. Thanks!

Lentil Soup with Lemon

Tasted this as this was cooking and it was delicious! Kept recipe as is, but lessened olive oil to a tablespoon. When I added the lemon juice and cilantro I felt the lemon juice changed the flavor somewhat and it wasn't as good (still quite tasty). Next time I'll just omit the lemon juice.

Butternut Squash Soup

This was one of the tastiest soups I've made. If this had've been served to me at a high-end restaurant I would've been super pleased! I made very few changes: I used shallots instead of regular onions; used only 1/2 a block of cream cheese instead of the 2; used olive oil rather than butter and finally, used veg stock. I also baked squash for 45mins for ease of peeling. This was creamy and very flavorful!

Broccoli Chicken Divan

Very easy and quick dinner to make when you're stuck for something. Used cream of mushroom soup, raw broccoli (prefer a bit of a crunch to my veggies), and 1 cup of 2% milk. I whisked the liquids together, added some lemon pepper, parsley and garlic powder. I then poured liquid over the raw broccoli and cooked chicken. I mixed it well then topped it off with a little gruyere cheese and seasoned breadcrumbs (did not add butter to breadcrumbs - no need as it browned perfectly). Will keep this dish in my household for those nights I need something quick and easy to make - thanks for sharing!

Sticky Date Pudding

This was good and light-tasting, however, it's not the sticky date pudding I'm used to back in OZ. The sauce needed to be thicker in my view and perhaps next time I'll add a lot more dates. Also, recipe back home did not have chocolate. This was a decent substitute and it's a keeper, but I'll continue to search for the perfect Sticky Date Pudding. Thanks for sharing!

Sweet, Salty, Spicy Party Nuts

Made exactly as written except that I used parchment paper. As it cooled I occasionally mixed it to prevent any sticking to the sheet and to each other. Worked like a charm. Very delicious, have already gotten 2 requests for the recipe!

Lentil Soup

This was exceptionally good, however, I didn't make it as it was written although I made only a few changes. I used 4 carrots, about 4tbl garlic, 8 cups veg. broth, 2 cans of diced tomatoes with basil and about a tbl spoon of cumin. I also saw no need for the amount of oil used so cut that down to about a tablespoon full to saute the onion, carrots and celery. After the onion was nicely soft I added the tomatoes and cooked that up for a min or so. I then added the veg broth, salt, pepper and cumin, brought it to a boil then simmered with lid on for at least an hour. I did not add the vinegar, nor the spinach. This was SO tasty and hearty on a freezing night and very quick to whip up.

Bat Cupcakes

These are beyond cute and adorable. Looked exactly like flying bats with glowing red, beady eyes - perfect for the Halloween bake sale at my son's middle school. They were easy to do. What I did, however, was use a butter knife to make slits in the cupcake for where the cookie wings were going to go in. This way I didn't smoosh the cupcakes when I pressed the wings in. I had everything unwrapped, cut and iced before I did the bats; saved on time and the bats were done in no time. I also made a different chocolate icing. It's one from this site which produces a very light chocolate color, which was better in my mind as the bats really stood out! Thanks for sharing these adorable bats!

Creamy Chocolate Frosting

Wish it wasn't as good as what it is. So after making a double batch for a 3 layer cake I had some left over. I ended up spreading it over graham crackers and eating them sandwich-style! Heaven :) Then, my son had an epiphany...why didn't we put the graham cracker sandwiches in the freezer for several hours! Oh my, they were so good...not to mention the cake. Fabulous icing recipe. No comparison to store-bought. This is my go-to recipe, in fact, I'm waiting for some cupcakes to cool right now so I can frost them for my son's school bake sale.

Baked French Fries I

Very tasty and easy! My son kept going on and on about how tasty these were. Another similar recipe calls for a lot more oil so I was pleased that these turned out crispy without all the additional fat. Simple recipe that can be altered to your tastes. Thanks!

Cucumber Nut Bread

Great! Replaced 3/4 of the oil with apple sauce otherwise kept it as written. I had so many cucumbers this year in my garden that this was an absolutely perfect way to utilize them all. Made 6 loaves and froze 5. Very yummy! Great recipe! Thank you!!

Red Lentil Curry

Fast, easy curry. Flavor is delicious. I just added a chopped tomato to the curry mixture for some extra testure otherwise kept this exactly as written. Now, my 11yr old may find this a tad too hot for his taste buds so if your children don't like some heat, adjust your quantities. He hasn't tasted it yet so we'll see :) Looking forward to a bowl full tonight!! Update: This was soooo good! I look forward to it even more tomorrow night when the flavors have time to soak into each other. My 11yr old loved it, not too hot for him; he had two helpings!

Winter Vegetable Hash

I loved this! I put in a lot more kale and cooked everything together apart from the mushrooms, which I put in towards the end. I omitted the red bell pepper as I'm not a fan of cooked peppers, otherwise I kept true to the recipe. I did cook it a lot longer than mentioned - kale in my view needs quite a bit of cooking. This was a hearty, delicious meal and I will be making this again and again! Thank you!

Vegan Stew

I alternated this recipe somewhat based on other reviews and this was seriously delicious, not to mention absurdly simple. I only had one of each vegetable so I added a little leek and a stalk of celery. Instead of the rice I added 1/4 cup of barley. I tossed everything into a pot with 4 cups of water, 2tbl peanut butter, 1tsp ginger and 1tbl soy sauce and let it do its magic. It was a tad thick at the end of its cooking time so I added about 1/2 cup of veg broth. I'm really looking forward to eating some leftovers tomorrow! On top of it being so satisfying, per serving, it is low in calories and fat. You won't be disappointed!

Apple Crisp II

This was very tasty and hit the spot for that after-dinner sweet we all wanted. My only complaint is that I would have wanted the crisp part to be crispy/crunchy, other than that, this was delicious and I would certainly make this over again. I used apples I had on hand - no granny smiths nor red delicious and it was wonderful. 5 stars on taste and ease. Thanks for sharing!

Apple Pie

My 10yr old son made this entirely on his own this afternoon; found the recipe, prepared and baked it all - that's how easy this recipe is! I'm all in for letting my son find recipes and cook them - this recipe makes him look like a pro! Delightful taste, crusty, golden pastry - wow!! Knowing my son he followed the recipe exactly. You will NOT be disappointed with this apple pie. I'm going to ask him to make another this weekend when we have guests over!

Strawberry Bread

This had a tartness to it that I loved. Not very sweet, but just right. I put in way too many strawberries, my fault, so my bread turned out to be too moist and fell apart easily, however, next time I'll stick to 2 cups. 5 stars on the flavor and easiness.

Double Layer Pumpkin Cheesecake

Wow!!!! First time ever making cheesecake and this was beyond good. I'm not a huge cheesecake fan, but my husband is and he was going on and on at how good it was. I did use three packs of cream cheese otherwise kept recipe exact. I layered the cream cheese filling with 1.5 cups so it was more pronounced. I baked it in a water bath and when it was finished I left it in the oven with the door ajar for about an hour more then popped it in the fridge for about 24 hours prior to serving it to my guests. Father-in-law raved about it too. Presentation was something like you'd be served up at a restaurant. My husband couldn't believe I'd made it - lol. Thanks for sharing this wonderful recipe, which, will stay in my recipe box for all time.
