My favorite things to cook
Love to try new vegetarian recipes. I get organic vegetables delivered to my door fresh weekly so therefore get to try some vegetables that I haven't in the past bought. I've thoroughly enjoyed, along with my family, trying new foods/recipes every week.

Chocolate Chip Banana Bread II
This is good, moist and tasty, but it's definitely more cake-like. If you're wanting an afternoon "something" with that cuppa, then you won't be disappointed. I sprayed my tins with pam and I had no trouble getting them out of the pans; they literally just slid out. I did substitute butter for shortening and halved the butter quantity by half and used half apple sauce - wondering if that made it cake-like? No other problems, loaves held their shape up nicely when cut. Thanks!

Lentil Soup with Lemon
Tasted this as this was cooking and it was delicious! Kept recipe as is, but lessened olive oil to a tablespoon. When I added the lemon juice and cilantro I felt the lemon juice changed the flavor somewhat and it wasn't as good (still quite tasty). Next time I'll just omit the lemon juice.

Butternut Squash Soup
This was one of the tastiest soups I've made. If this had've been served to me at a high-end restaurant I would've been super pleased! I made very few changes: I used shallots instead of regular onions; used only 1/2 a block of cream cheese instead of the 2; used olive oil rather than butter and finally, used veg stock. I also baked squash for 45mins for ease of peeling. This was creamy and very flavorful!
