Chocolate Cookie Cheesecake
I made this for Thanksgiving, and it was gone before I could get a piece...the pumpkin pies just sitting there, forlorn. So I made another one, the next day...I managed a piece that time, but my family had eaten all 16 pieces by the end of the day!! I've made another since then, for my son's bake-sale fundraiser for Boy Scouts, and last night I bought 3 9 inch springform pans ($6 each at Ross) and I'm going to bake the cheesecakes then give them - in the pans- wrapped up in pretty saran wrap and bows with the recipe attached for my kid's teachers. This will be a BIG hit, I know :) You don't need to change a thing...but if you want to use the granache topping from the Bailey's Irish Cream cheesecake on this site instead, it will only make it that much better. Or, if you like mint and it's during the holidays, take advantage of the Mint Oreos on sale and use those for a special taste. I would give this 6 stars if it would let me

Cheesy Potato and Corn Chowder
This is a family favorite...I found it when I needed to make a soup to bring to church one night and searched for one that was highly rated. It's great as written, but I have made a few changes over time. I cut the chiles in half for my kids, and I add diced chicken and canellini (white) beans to the recipe. This makes it a whole meal. We serve with a good bakery bread and OhMyGosh is it good!!! I came back to multiply the recipe to make for 30 guests Thanksgiving week, and realized I'd never rated it. 5 stars all the way....people beg me for the recipe every single time I make it

Pistachio Cake II
This is a super rich cake. I cut the frosting amount in half, as otherwise it's too sweet for us. But I have to say that I've never brought it to a party without people begging me for the recipe by the end of the day. Delicious! Edit 05/06: It's been a couple of years and I'm still making this cake. Made it tonight for a church cake auction tomorrow. Wanted to mention that I've started adding about half of a small can of drained crushed pineapple to the frosting...fold in in right before I put it on the cake. It adds a really nice twist.
