Microwave Pickles

Excellent! I doubled the recipe but did not change the ratios at all. The only hard part was figuring out how long to cook the doubled batch. Not sure how long I ended up cooking them. I did four minutes, four minutes, then in sets of 2 minutes (stirring in between each time). They came out really delicious so I highly recommend.

Light Oat Bread

This is one of my go to recipes when I don't know what bread to make. I love the taste and texture. The only changes I make is using honey instead of brown sugar and using 2c ww flour, 1c ap flour.

Honey Wheat Bread I

I really liked this recipe! I made the dough in the bread maker by just putting in the order recommended by the machine. Then I took it out, separated it, placed it in the 2 loaf pans (I do like oven baked better than bread machine), let it rise for 1 hour, and then baked in the oven. It was fantastic with a great sandwich bread consistency for easy cutting and serving. The only change I made (besides prep) was that I did 3c ww flour, 2c b flour instead of vice versa as recommended and I added 2 T of wheat gluten.

Easy Chocolate Chip Cookies

Yummy and oh so quick and easy. I used chocolate cake mix and butterscotch chips because that is what I have on hand. The only reason I didn't give them a 5 star review was because the texture wasn't a chewy cookie. It did have a bit of brownie/cake type texture. But the taste was great and they were so easy that I was able to whip up a batch on a busy night to bring to my son's school tomorrow.

Lemon Coffee Cake

I think I would have loved this and given it 5 stars if it used less lemon pie filling (the lemon flavor was too strong in my opinion having that much filling) or if the same cake were used with a different flavor filling. I think it would taste amazing with apple, peach, berry etc or about half the lemon. My dad however did like it just the way it was.

Oatmeal Pancakes II

The only change I made was using whole wheat flour. They tasted great. I'm sure they would have even tasted better using regular flour but I was trying to sneak some nutrition in there ;) Oh I technically made another substitution, I used whole rolled oats because I don't have quick cooking oats. I just put everything in my stand mixer (buttermilk and rolled oats in first while I gathered other ingredients). So easy and my boys loved them.

Pumpkin Waffles with Apple Cider Syrup

I did not make the syrup just the waffles but they were delicious. I used cinnamon and nutmeg for the spices because I didn't have ginger or allspice. The waffles were so good that my boys were eating them faster than I could cook them. I put some chopped apples, cinnamon, little bit of maple syrup, and spoonful of pumpkin in a saucepan and cooked it up as a topping. This combination (the topping and these waffles) actually tasted really good cold as leftovers too :)
