Kielbasa Bean Soup

I modified this based on what I had on hand, but this recipe is a great starting place so I'm reviewing anyway. I am not usually a fan of chickpeas, but I really liked them in this recipe. I used low fat turkey kielbasa so that this recipe is low fat, high protein, and really filling. I used 2 cans of beans, no zucchini or green peppers, and tomato paste instead of diced tomatoes. The leftovers are great and the smokey flavor was more pronounced. My 3 little kids ate it, too. I'm making more today! Just check the sausage and it's gluten free also.

Peanut Butter Cornflake Crunch Bars

We make these regularly around our house. They are pretty sweet so they go in the kids lunches as their treat. I used gluten free organic honeyed corn flakes and sometime sub agave syrup or honey for the corn syrup. Easy, fast, and more protein than a rice crispy treat.

Lentil Soup

I made this according to the directions. No one in our family wanted to eat it. The vinegar taste seemed overpowering while everything else seemed bland.

Creamy Caramel Flan

This was a beautiful dessert - very impressive looking! It came out of the pan easily and I made it the day before serving, which was convenient. For us, it took longer to cook than the directions stated. I should have followed the other reviewers suggestions and cut the cream cheese in 1/2. 8 oz cream cheese was a bit too much cream cheese flavor and heaviness.

Rempel Family Meatloaf

My family ate this without complaint, but there are better recipes out there. I thought the taste and texture of the onion soup mix was too pronounced. OK for a fast weeknight meatloaf.

This was a pretty tasty marinade. I reduced the salt and it was still a bit too salty for our family. We did not find that the meat was tender enough, but maybe we'll try a different cut of meat.

Spoiled Baby Back Ribs

I followed the direction exactly except I used Sweet Baby Ray's BBQ sauce instead of the sauce recipe here. They turned out perfectly!!! It was one of my first attempts making ribs and everyone was thrilled.

Spiced Pot Roast

Finally, a "pot roast" recipe my husband loves. In fact, all of us, including my 3 young children loved it. Sadly, no leftovers. I didn't have any chutney so I subbed sweet & sour sauce. Did not use any flour (gluten free!) and did not brown the meat - just threw everything in the crock pot on low until tender - about 5 hours. Served with rice. Try it!

Tuna Salad with Cranberries

This is a really nice twist on tuna salad. Our family must eat gluten free (no wheat) so we ate it with "scoops" corn chips and the salt & sweet combo was really nice.

Delicious Ham and Potato Soup

Yum! Not really thick, but really really delicious. Hubby had forths and a double batch was gone in less than 24 hours. Update: To make gluten free, sub cornstarch for flour - use half the amount mixed w/cool water till smooth then add to butter & milk. Made this soup with potato, broccoli, cauliflower, carrt, onion, no ham - delicious!

Sunshine Muffins

Simple and good - all the kids liked these. Not as crumbly as corn muffin - not as messy. I used a "confetti" cupcake mix for some fun color - I've also had success adding frozen blueberries (bake a few minutes longer). I used paper cups and they were a little tricky to take out without the muffin breaking up, but the kids didn't mind. I think foil cupcake liners would probably work best. I have made these several times without muffin liners and they come out fine when sprayed with lots of cooking spray.

Spicy Beef Curry Stew for the Slow Cooker

I thought this was OK. I increased all the seasonings and it was still not tasty enough for me. My husband liked it and we ate without complaints, but nothing to write home about. I would definately use better quality meat than "stew meat."

Soft Oatmeal Cookies

Wonderful! I subbed 1/2 wheat flour, used 1/2 the salt, and made 1/2 the batch with raisins. I might decrease the salt a bit more next time. Everyone loved these!

Fluffy Pancakes

This is a fantastic pancake recipe. I think it will be our usual recipe from now on. Update: My daughter was diagnosed with Celiac Disease - we are now a gluten free familiy. This recipe is still great - I sub the flour for GFMeister gluten free flour and the kids LOVE them. They freeze well so I usually make a triple batch. I used the same recipe in my waffle iron.
