About this Cook
I the happy mom of 3 young children 7, 5, & 3, and happy wife of 14 years. I used to feel like an expert cook - since my daughter's diagnosis of Celiac Disease I am relearning how to feed my family and entertain without wheat, rye, barley, oats & anything made with them. It's a bit of a challenge, but one that I am learning to love. Food should be a pleasure, not a chore.

Chicken Cordon Bleu II
We all loved this recipe! My chicken breasts were thick so I sliced a pocket into each and filled the pocket with ham and cheese, then secured with a toothpick.

Restaurant-Style Taco Meat Seasoning
Had guests coming for taco dinner and realized I was out of taco seasoning packets. This was easy and delicious so I might not bother buying the packets again. I didn't have corn flour so I sprinkled corn starch on top of the meat when it was simmering and mixed it in.

Peanut Butter Cornflake Crunch Bars
We make these regularly around our house. They are pretty sweet so they go in the kids lunches as their treat. I used gluten free organic honeyed corn flakes and sometime sub agave syrup or honey for the corn syrup. Easy, fast, and more protein than a rice crispy treat.
