About this Cook
I the happy mom of 3 young children 7, 5, & 3, and happy wife of 14 years. I used to feel like an expert cook - since my daughter's diagnosis of Celiac Disease I am relearning how to feed my family and entertain without wheat, rye, barley, oats & anything made with them. It's a bit of a challenge, but one that I am learning to love. Food should be a pleasure, not a chore.

Kielbasa Bean Soup
I modified this based on what I had on hand, but this recipe is a great starting place so I'm reviewing anyway. I am not usually a fan of chickpeas, but I really liked them in this recipe. I used low fat turkey kielbasa so that this recipe is low fat, high protein, and really filling. I used 2 cans of beans, no zucchini or green peppers, and tomato paste instead of diced tomatoes. The leftovers are great and the smokey flavor was more pronounced. My 3 little kids ate it, too. I'm making more today! Just check the sausage and it's gluten free also.

Peanut Butter Cornflake Crunch Bars
We make these regularly around our house. They are pretty sweet so they go in the kids lunches as their treat. I used gluten free organic honeyed corn flakes and sometime sub agave syrup or honey for the corn syrup. Easy, fast, and more protein than a rice crispy treat.

Lentil Soup
I made this according to the directions. No one in our family wanted to eat it. The vinegar taste seemed overpowering while everything else seemed bland.
