Apple Cole Slaw
I tried this recipe and my fiancé loved it. He's not big on salads but asked me to fix this salad more often. I did not include bell pepper or an onion. I forgot them when I went grocery shopping. I used vinegar instead of lemon juice and the salad was refreshing.

Broccoli Rice Casserole
This is a great recipe. You have to customize it to your taste in order for it to turn out right. For instance, I used sharp cheddar cheese instead of American processed cheese. I added seasoned chicken broth to both soups instead of water to give the dish some dimension. Also, I sometimes add skinless dark meat chicken. Everyone can't get enough of it.

Zucchini Cornbread Casserole
I tried this recipe. I followed the instructions and used exact measurements of ingredients. Instead of shredding the zucchini, I chopped it because I did not have a hand grater. My bread was just right. It had a moist cornbread texture. I would make this dish again except I would put ground Italian sausage in it and cut back on the onions; they dominated the taste of the dish. Next time I will try another cornbread mix. Jiffy was too sweet. All in all, this dish is a good stuffing that have limitless options to suit your taste.
