Chewy Brownies

I added about 3/4 cup of shredded coconut and 1/2 cup of chocolate chips. Mine turned out more like a cake than brownies but I just made them last night and the whole pan has been eaten so obviously they are scrumptious! :) This has been printed and added to my recipe book as I will definitely be making these again.

Zucchini Bread with Coconut and Chocolate Chips

I make this into muffins as it always cooks a little more evenly for me. Also, I mix about 1/4 cup sugar and about a teaspoon of cinnamon in a small bowl and sprinkle on top before baking. :) It's so good!!

The Best Lemon Bars

I make this recipe ALL the time now. I usually add an extra 1/4 cup of sugar to the crust and an extra tablespoon of bottled lemon juice to the "filling" just because I like a sweeter crust and tangier filling. But this recipe is phenomenal and I always get many compliments. And it's SO easy.

Roasted Potatoes with Tomatoes, Basil, and Garlic

These were DE-licious! :) I found that I had to bake them for waaay longer than the instructions called for before the potatoes were tender. But it was worth the wait. Also, I put all the ingredients in a gallon-size ziploc bag and shook it all together to ensure that everything was evenly coated. It just made it a little easier. I will definitely be making this again. The only change I wish I had made is doubling the batch so we could have had some leftovers :)

Vegan Cupcakes

True vegans do not eat white sugar. During the final purification process, cane sugar is filtered through activated carbon (charcoal) which may be of animal, vegetable, or mineral origin. The “white sugar” can be replaced with beet sugar or unbleached sugar to be truly vegan. With the exception of that, these are very good.
