Linnie's Spanish Rice

Very good and easy, I put this in my steak tacos. Not too sure if Id like it as a stand alone dish though. I did sautee the rice in butter first and also added some beef boullion to the water when I cooked it. I took the suggestion of others and cut down the salsa to just 1 cup but it still seemed a little runny, if I had not been in a rush I would of tried cooking it down longer, but it was good anyway. I will make this again when I make steak or chicken tacos (with my changes of course).

Down-Home Breakfast Skillet

This was very good, however I did change it a bit. I used fresh potatoes. And added salt and pepper to taste. Instead of adding the eggs directly to the sausage mix, I think they might have gotten lost in there, I cooked them (scrambled) separately and served them over the sausage mix topped with cheese. This ended up being an excellent scramble and I will make again.

Pineapple Layer Cake

This was so good! I was skeptical of this recipe since it calls for a box mix and I usually try not to cook with mixes, but I was short on time for easter dinner this year and thought I'd try it. I made it exactly as directed and everyone raved about it! It tasted similar but better than a pineapple upside down cake. Very moist, easy and delicious. I will for sure be making this again!

Garlic Croutons

Very versatile recipe, i added about a 1/2 packet of ranch seasoning mix to the bread before I sauteed it otherwise followed the directions as written. We now love salads in our house and I will never buy croutons again!

Herman Pancakes

A new favorite recipe! I used my own sourdough starter, and Substituted 1/2 of the flour for wheat flour. I added a little extra sugar after reading some other reviews that suggested to. So Good! Next time I would like to substitute some of the oil with applesauce just to make it a little healthier.

Salsa Chicken Burrito Filling

Cut back on the taco seasoning and I threw the whole works in my slowcooker than added some rice before it was done. So good! It was a little dry the next day so I had to add a little more salsa to moisten it. Served it on tortillas with cheddar cheese sprinkled on top. Will make again! Thanks!

Jumbo Shrimp and Asparagus

This was delicious! After reading the other reviews I noted that some others found the sherry a little off tasting, so I substituted the sherry with a little rice vinegar and the flavor was perfect for this asian inspired dish. It would have been great over rice but I put it over some buttered fettuccine noodles and that was excellent too!

Cranberry Orange Cookies

These were pretty good. My family loved them. I did add some almond extract to the icing to bring out some of the flavor and next time (and there will be a next time) I will try adding some almond or vanilla extract to the cookies too.

Gingerbread Waffles

Ive been making this recipe for a couple of years now and I love them! They taste a lot like regular gingerbread which has always been a favorite of mine. When I make them I cook extra waffles to put in the freezer for future use. (They even taste good frozen!) But I do reheat them in the toaster for a quick morning fix.

Asian Lettuce Wraps

AWESOME! After reading the other reviews, I decided to follow the directions completely which required me to buy some new ingredients that I hadn't worked with before, but I'm so glad I did! It was so good! I served this on a bed of rice noodles fried in oil, and made a sauce as some other reviewers suggested using 1 tsp sesame oil, 2 T soy, 2 T rice vinegar, 1 T chile paste. An awesome recipe! I will definately do this again!
