Spanakopita (Greek Spinach Pie)

This recipe will become one of my favorites of all time, after I add my tweaks. I followed the advice of StewartFip; I layered the bottom as well and skipped layering the middle. I drained any excess moisture (this is essential). I used 1 package of dry baby spinach (1 pound or maybe a little less is fine, 2 lbs is a lot) The end result could have been even better, so here's my 2 cents- I would have spent the time crisping up the bottom 8 layers in the oven prior to adding the filling. I would have used butter instead of olive oil to layer the phyllo (yes higher in fat but I don't like the taste of soggy olive oil soaked pastry.) This recipe was entirely lacking salt. Adding some parmesan cheese to the filling along with the feta would have been good, and added some salt. My local greek restaurant makes spanakopita casserole style too, I swear there is some kind of lemony element in it. Maybe next time I will add just the teeniest bit of lemon juice. You don't have to serve this right out of the oven, it was even better when we ate it the next morning as leftovers.

Rempel Family Meatloaf

This recipe is ok but only as a quick fix weeknight meal only. I read some reviews about how people had tried other meatloaf recipes and how this one was the best...blah, blah. I was thinking that the recipe didn't look like much, but then again it got so many good reviews... onion soup flavored beef loaf was what it was. I didn't like the crackers, I like the texture that breadcrumbs give the traditional meatloaf. There is nothing special about this meatloaf in any way. This is an excellent example of people posting really simple recipes that aren't even very good and people rating them highly just because the recipe is cheap and easy. The recipe is good for something quick, but not even close to being the end all of meatloaf recipes. I wasn't impressed.

Boilermaker Tailgate Chili

I was disappointed with this recipe. It's not that it wasn't's just that it was ordinary. This chili did not live up to the ratings or the amount of times it's been looked at. If you are looking for the best chili recipe ever, pass on this one. Don't get me wrong, it was good. I've had better though.

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

So as I was making these cupcakes, I was thinking...these aren't going to be that good, they are just a ball of cookie dough in yellow cake mix. But, they are good! BEST cupcake, NO. Who ever quoted it as the best really over exaggerated GOOD cupcake, yes. I followed this recipe without reading any reviews and the cupcakes turned out great! My only advice would be to very delicately drop the cookie dough onto the cake batter just so when the cake begins to bake around the dough it doesn't create a hole in the top when it is finished. It doesn't really matter though if you plan on frosting them. Again, NOT the best cupcake but a darn good 'cookie dough cupcake'.

Sour Cream Blueberry Muffins

Awesome muffins! I loved them! I did follow the advice of Jeannine and liked the result. However, I did think the amendment of half and half white and brown sugar was just slightly too much brown sugar to me. I would still alter the recipie by adding brown sugar too, maybe not as much as half and half ratio though. I would have probably put the sour cream in very last just because I just barley overmixed trying to incorporate everything else and mixed the cream up to much in the process. Would have been better with little globs of sour cream. Other than that, great!

Awesome Slow Cooker Pot Roast

This recipie really was AWESOME! Tender and delicious. The only change that I made was using beef broth instead of water. I'm glad that I did because it beefed up the flavor and I also used it to help me make the gravy. This roast makes a lot of juice, but don't expect it to work as gravy without thickening it. I also used a 5 1/2 lb roast exactly and the cook time was perfect, in about 8 hours. I would modify the amounts of the ingredients and possibly the cook time if you are preparing a smaller roast. Browning the roast before placing it in the slow cooker wasn't necessary as far as the meat being tender, however, I wish I would have done it prior just because it could have used some yummy crusted seasoning on the outside. Other than that, 5 stars!
