Honey-Ginger Grilled Salmon

Fantastic and easy! Subbed same amount of water and a drop of orange extract for the orange juice, and subbed 1 Tbs. dried minced onion for the green onion. Marinated for 1/2 hour, then while it was grilling, boiled the marinade down until slightly reduced, then spooned that over the salmon and brown rice on the side. My steak eating husband tasted it and said it was very good.

Broccoli-Stuffed Sole

My meat and taters husband took one bite, said "this is excellent", gobbled the rest down, and reached for seconds. Only change I made was subbed 10 oz. frozen chopped spinach (partially cooked) instead of broccoli. Very easy to put together.

Juicy Roasted Chicken

Skin was soggy. Yes, the meat was juicy, but not very tasty. Not worth the calories from the whole stick of butter. Too greasy.

Pickled Carrot Salad

Very good! My husband, a veggie hater, loved it, and had seconds. Used apple cider vinegar and olive oil and cut the carrots into coins.

Kale Puttanesca

Great! I used frozen chopped spinach instead of kale, kalamata olives since I think their flavor is so much better than black olives, and a little anchovy paste instead of anchovy fillets to "hide" them from my husband.

Capers and Halibut

Very good! I used flounder fillets, cooked them a minute on each side, and removed them from the pan while I made the sauce. Added about a tablespoon of lemon juice to the sauce, then put the fillets back in to heat up. My husband, who is not a big fan of fish, actually had seconds, which he never does with fish.
