Mini Cheesecakes

I am only giving this 4 stars mostly because I changed it up a bit. Otherwise it deserves 5!! I dont like vanilla wafers so I used Graham crumbs and butter (just followed the directions on the box) and pressed it into the muffin cups. Then used the cheesecake recipe provided to fill them. I followed others reviews and chilled them in the freezer prior to removing the cupcake wrappers. Then filled half with pureed frozen raspberries with some sugar and drizzled melted semi-sweet chocolate over all of the them. OH MY!! They are amazing:) And they are such a cute size for get togethers or whatever.

Sweet Dinner Rolls

Wow! I love making bread but rolls always seem to be a little harder to do. Maybe because I want them to have a fluffier texture than bread, which I like a little on the dense side. These were super easy! I made them for the first time on Turkey day for a dinner I didnt know we were going to until that morning and they were raved about:) I made them without a breadmachine and did find they did a little better if I let the yeast proof in the milk and water. Also it took a little bit more flour than the recipe called for to get that nice smooth texture. I have made 6 batches in 2 weeks:D It is now my go to roll recipe:)

Jerre's Black Bean and Pork Tenderloin Slow Cooker Chili

This was amazing!! I did substitute a can of corn for one of the black beans because I love corn in my chili:) and had fresh cilantro, shredded cheese and sour cream for garnish. This was such a hit with my hubby he asked me to make it to take on his annual hunting trip! Very high praise for him:D

Polish Cabbage Noodles

Loved the cabbage and onions, the texture with the noodles was a little bit different for me and hubby. We ended up eating all the cabbage and only half the noodles:) Served this with chicken apple sausages but it would have been fine without.

Raspberry Cake

A little too dry.However I refrigerated the leftovers and ate them the next day and they were amazing! Moist and sweet but not soggy. I think maybe I needed to refrigerate it all day instead of just a couple of hours. Also I made this with 8" rounds.

Mushroom and Potato Chowder

Best mushroom soup ever!! I followed this recipe really closely and was soo pleased with how it turned out! Even my mushroom loathing hubby went back for seconds:) I think I will follow another reviewers recommendation next time and puree a little bit of soup and add it back at the end to increase the mushroom flavor!

Broccoli Quiche with Mashed Potato Crust

This tasted okay. It was a little bland for me. Also the potato crust just wouldnt crisp up for me. I baked it in the oven for 35 min before adding the filling because I was running out of time (and patience). It was good for using up old broccoli and potatoes but otherwise just so-so.

Cod Curry

This was a really great way to use up cod! I didnt have some of the spices on hand so substituted curry powder and would agree with others that it needs a little bit of salt on the fish before it is added. Other than that this is a great recipe! I served it over brown rice:)

Bread Pudding III

I have never had or made bread pudding before and was stunned by how yummy this was! I did use some leftover whole wheat cinnamon raisin bread for part of the bread. But even my friends who did know what bread pudding is supposed to taste like loved this!

Black Bean and Corn Quesadillas

OMG!! Best Quesadilla EVER!! Super easy very tasty and DH kept asking when I would make them again:)I read some reviews and tried baking and frying, both were good but I prefer the fried:) I did use pepper jack cheese instead of monteray jack, just because it was what I had on hand.

Tomato-Curry Lentil Stew

This was really good! I did tweak it a little after reading other reviews I added some finely chopped carrotts and used vegetable broth instead of water and fresh tomatoes. I also generously doubled the curry. Hmmmm. Love curry! This was great and even DH was impressed, this from the man who doesnt like lentils:)

Wow! This is such a quick and easy recipe that ends up being so much more! I loved the subtle flavors that all blend so well. I made this last night to rave reviews and third helpings:) It definitly is going to be a weeknight staple.

Honey Wheat Bread I

This bread is great for sandwiches and toast and fun to make! I didn't have any evaporated milk so I made sour milk by adding some lemon juice to regular milk it still turned out great!

Homemade Black Bean Veggie Burgers

WOW! These are wonderful! This is a new staple in my recipe box! I have food allergies and have to be careful with a lot of healthy premade veggie burgers, so I was so excited to try this recipe! I did follow some other suggestions and added a generous amount of breadcrumbs but that was all I changed. This was a quick easy healthy and popular dinner. What more can I say!

Hearty Tuna Casserole

I LOVE this casserole! I grew up with tuna casserole and always hated it. But this has restored my faith in tuna:) I did tweak it a little just couldn't do the mayo. So I used cream of mushroom soup instead and used pepper jack cheese and added more zucchini. My DH went back for thirds! and asked it be put into the regular meal rotation. The zucchini is the best part! Addendum: I tried this with the Thyme and hated it! I think it is better w/o.
