Gluten-Free Lovely Lemon Cupcakes

These cupcakes turned out very dense and heavy and with a gross after taste (licorice). The cupcakes ended up in the trash; however, the frosting was wonderful! 3 stars because the frosting was great.

Sweet and Spicy Pork and Napa Cabbage Stir-Fry with Spicy Noodles

This recipes uses a few more bowls and steps than I currently have the patience for. However, it has lots of flavor and I love the variety of vegetables used.

Bat Wings

This is a great recipe with a few modifications. Most reviewers suggested adding garlic/onion. I used drumsticks. I added approx 3 tsp minced garlic, a chopped onion, approx 1 tsp garlic powder and 1 tsp onion powder. I then marinated them overnight in the mixture. After laying them out on a foil lined baking sheet, I poured the extra marinade over them. I baked them approx 25 mins per side. They cooked through perfectly. I served these to a group of 15 teenagers and got rave reviews. They came back for more! Always a good sign. Thanks for sharing.

Curry Pumpkin Soup

This is a fantastic recipe...with a few changes. I added finely chopped onions to the butter before adding the flour/curry powder. I also substituted coconut milk (1 can) for the half-and-half. I served this to a group of 15 teens, 2 college students, and 4 adults. It was an absolute hit! One suggestion I got from 2 people was that it'd be great served over rice...another was to add raisins. It really does only take about 20 minutes to make. Definite keeper recipes. Thank you!

These were very good. I omitted the salt because typically there is already salt in seasoned bread crumbs and 1 tsp is a lot! Paired these with Sweet & Sour Jam.

Excellent recipe. I used apple butter and omitted the seasonings as the apple butter was quite strong in flavor. They turned out pretty good.

Banana Crumb Muffins

Simple and yummy! I added 2 Tbsp rum (I didn't have rum extract, per JARRIE's suggestion). Truefully, I couldn't taste the rum, so possibly requires more and extract would be better. The topping works out to about 1 TBSP per muffin. I made 11 muffins, however. The cups were filled to about 1/4" below the top of the cups without the topping. We're struggling not to eat faster than we should! Very tasty.

Peach Preserves

These taste great. I think I'd like to try adding a few spices next time (like cinnamon or cumin). I am rating this 4 stars because I found #2 confusing. Apparently, pectin only sets up a certain amount of liquid. I'm relatively new to canning preserves, so did not know this and did not understand why I had to pour it out into a bowl and measure it back. However, I pour the sugar in the pot directly and boiled everything and added the pectin. I got 11 jars and it tasted and set up just fine. Would definitely make this again. Thanks for sharing the recipe.

Grandma's Lemon Meringue Pie

The filling for this recipe is simply amazing. It has a great flavor and set up well. The lemon zest just added to the homemade-ness (new word!) of the pie. I even had little bits of lemon pulp. I am not giving this 5 stars because the meringue is not as straight forward as this recipe. I recommend reading up on meringue before attempting to make your own. My first try cried rivers of tears. (Too wet!) My second was thin and tough (too dry). So...I'm going to have to practice until I get the correct process for my oven ...and humidity. As far as I can tell, I recommend 1/2 tsp cream of tartar and vanilla extract added to the egg whites. I do NOT recommend adding lemon extract to the meringue. It leaves a bitter aftertaste. I used a graham cracker crust and it was great :)

Honey-Spice Drumsticks

I realized I did not have OJ when I started to make this. I threw in some lime juice and a little extra honey and they turned out fine. I think the recipe isa good one. Good alternative to spicy marinade for the grill.

Lentil Soup with Lemon

I like that this is a quick fix. I don't need to soak anything or wait hours. This recipe also uses stuff I mostly have on hand or in my pantry. Very tasty!!! Very good for the diet, also. :)

Glorious Sponge Cake

Easy Devonshire Cream

This recipe is great. I make it just as it is and add food coloring to match the decor/occasion. My husband was born/raised in England and was delighted that it was very close to "clotted cream." It's quick and easy to make and adds a real treat to the buffet/table.
