Caramels I

I subbed dark corn syrup (I always use this in caramels) and brown sugar for half of the sugar. Resulted in wonderful, rich caramels. I also sprinkle some with sea salt for salted caramels. Yummmmmmmmmmy. The basic recipe is incredible. thank you. I also doubled this recipe, which I don't recommend unless you have helpers for the stirring. It took 1 1/2 hours for them to come to the right temp. I now have arms like Popeye! But, worth it! Excellent recipe.

Clone of a Cinnabon

These are excellent, but never never NEVER use margarine when you're baking. So, in the dough, use 1/3 cup real salted or unsalted butter. I didn't have cream cheese, so I just made a powdered sugar glaze. Kind of seems unfair to rate a recipe when you make alterations, but they were delicious. Probably would have rated 4 stars if margarine were used in the dough.

Apple Crisp III

I made just as Carrie specified. My husband and son loved it. I thought it was a bit too sweet, but I'm pretty sure that's because I used really sweet apples. Really a nice change from oat based crisp. This will be a go to recipe for me. Super easy too. Well done Carrie!

Kielbasa and Cabbage

I only rate recipes that I make as they are written. Anything else should be submitted as a new recipe, because it is! Why affect the rating of the "as written" recipe and give people a false indicator of the merit of a recipe? OK, stepping off soap box! And stepping into hypocrite-ville :) I'm rating this recipe even though I did make changes. The changes I made? I subbed turkey bacon and I left out the caraway because hubs doesn't like it. We loved this recipe. I would add in leftover cooked potatoes or serve over hot boiled potatoes next time. This is Keeper Comfort food adaptable to a healthier lifestyle. Will make again and again. The red pepper provides just enough zing. We used turkey kielbasa, but you could use smoked pork loin chops or just about any leftover lean meat. Great recipe. Thank you for sharing.

Broccoli Cheese Soup III

I used my homemade broth as a base and I'm just realizing now as I review this recipe that I used too much! So, I ended up with a very dilute final product and had to back peddle to fix it. I think this is a good recipe. I think it could be better with the addition of some shredded carrot and use fat free half and half for the milk. Even better, would be to make your own "cheese sauce" with a roux base. And mix this into the broccoli (and carrot) simmered in broth. Hot sauce is a must. We dipped sandwiches in it. A good basic recipe, needs a little work to make it perfect.

Amish Bread

Fantastic, soft on the inside, crisp tender crust, white bread. I subbed applesauce for the oil and it came out of the breadmaker delicious, fragrant and amazing. This will be our go to recipe for white bread. Superb served with strawberry rhubarb jam.

Tater Tot Casserole III

Good. A bit too much sauce. Definitely cut down on the milk. I used canned mixed vegetables in place of the green beans. It's just super cheap comfort food, so if you're looking for something amazing, move on.

Lisa's Chocolate Chocolate Chip Cake

Very good, very rich. Doesn't need frosting! Of course, as most All Recipe users, I didn't follow the exact recipe! I subbed Ricotta cheese (cause we're having a blizzard and I didn't want to go out for sour cream!) for the sour cream. Chunky applesauce for half the oil. And used full sized chocolate chips. Excellent, moist, deep dark chocolate flavor.

Grandma's Homemade Banana Bread

Yummy. The only thing I would change is using smaller loaf pans. I ended up with two flatter loaves, but still good. Used brown sugar for most, had three bananas, so threw them all in, and increased the vanilla cause I'm not a good measurer (couple of glugs from the bottle).
