Double Tomato Bruschetta

This was a wonderful recipe. I did leave out the sundried tomatoes, did not have them on hand cuz I really don't like them. I was lucky enough to be able to use tomatoes and basil from my garden, good timing! It came out perfect and I got rave reveiws from my dinner guests. Thanks Laurie! This one is a keeper.

Prosciutto Wrapped Asparagus

This was a great side dish, way better than boring old plain asparagus. Did not find it too salty at all. Maybe buying a higher quality prosciutto made the difference, not sure. I added some fresh chives from my garden to the cream cheese. Will make again for sure!

Bacon Wrapped Dates Stuffed with Blue Cheese

Tried them with MAPLE bacon, OMG! Thank you for the tip on placing them on a rack so they're not sitting in oil, very helpful! I filled mine with crumbled gorganzola and some with cream cheese, some with both. Incredible! Thank You!

Angela's Awesome Enchiladas

Great chicken enchilada recipe, they're not even out of the oven yet and I can tell they will be awesome. Super soft and creamy. I added a can of sweet whole kernal corn for a little snap. Also used flour tortillas, I know I know, I was always against it too, should be corn tortillas naturaly, but my brother who is an executive chef insisted I try them once with flour and I have never gone back! Thanks for the recipe, it's a keeper.

Egg Salad Sandwiches

YUM! Is all I have to say. This is a great simple basic egg salad recipe, doesn't get all crazy adding things that just don't belong in egg salad. Perfect flavor and consistancy. Thanks!

Big Al's K.C. Bar-B-Q Sauce

Oh Big Al! This was to die for! I actually added a very small sweet onion, chopped and carmelized and it was out of this world! Q'd some thighs and drumsticks to perfection! It was gone in a flash! Except the couple pieces I hid for lunch the next day. It's a keeper! Thanks!

Foolproof Rib Roast

The absolute best! Thank you! I used a ten pound roast and only had to add about 20 minutes to the final roasting time. It was THE best prime rib I've ever had, and the rest of the guest raved about it. It was cooked perfectly, light medium rare in the inside and medium towards the outer ends. Total perfection! Don't forget to let it rest when you take it out of the oven. THANKS! 12/16/10 Not really an update, I was just sitting in traffic for the last hour day dreaming about this prime rib! It was THAT good. I will never cook it any other way! FYI for those of you cooking a larger roast like I did, don't be afraid, follow it to a T, just add some time to the end. ENJOY. Here I am again brushing up on this recipe for tomorrow. I always like reread my own notes and others reviews. And if I read about Paula Dean one more time I'm afraid I will lose my appetite! Sorry can't stand her and highly doubt if Any if her recipes are original. But I digress. Anyway cannot wait to make this tomorrow!!

BLT Dip

Not sure what to say about this dip. It is yummy. The reason I give it 4 stars is because the short list of ingredients, that are usually on hand. But the dip itself was just odd and not what I would take to a gathering. I am sure most folks I know would scarf it up though, it just seemd lacking. It really was good, I tried it with a fork and had to stop myself from eating more. It's more of something I would pour over sliced tomatoes and have for lunch. Definitiely tasty. Followed the recipe to a T, the quantities called for are spot on. *UPDATE, Got Kings hawiian bread snackers rolls and made a sammy with this dip OMG to die for! YUM.

My Best Clam Chowder

Really good. Thanks Pioneer Girl! I kept the same ingredients but did a few things different, all the same in the end I'm sure. I did add bacon though and cooked the onion, celery and a clove of garlic in the bacon drippings. Made a roux of that with the flour. Had I known before hand I would have added one more can of chopped clams to the 3 of minced. This is great hearty soup for sure! The potatoes thicken it up nicely. I feel a cold coming on and this was the perfect comfort food to get me through that! Thanks again!

Honey Baked Chicken II

OMG YUM. This chicken was superb! I even left out the salt, didn't sound like it would need it for whatever reason, and it didn't! This was super easy and quick. I did use about a tablespoon of curry powder and really only notice a nice hint of it in the chicken. Awesome lunch, thanks!

Caramelized Baked Chicken

Liked it, a lot. Didn't LOVE it, but liked it very much. Thought it would be a tad sweeter. And maybe a tad tangier with the ketchup. So, it was good, not great. Cooked up nicely for sure, I usually bake my chicken this way, to come out sticky and crispy but super moist inside. Thanks for the recipe! Will attempt to tweek it to my taste.

Best Spinach Dip Ever

Yep, best ever! This was my moms go to spinach dip recipe for years, though she used Knorr's Spring vegetable soup mix. I had to try the leek and am glad I did! Sooo good. I did double the recipe, planning on using the entire box of spinach of course, so I used two to double the recipe. I did notice that the full two cups of mayo and two containers of sour cream looked like it was gonna be way too much amd possibly make it runny, so before mixing I removed about a half cup mayo and a cup of sour cream. I just finished mixing it all up and it's getting happy in the fridge. I will update if it turns out too dry and I have to add back the mayo and sour cream. But boy did it taste GOOD! Thanks Shawna's Dad! ***Update! next morning, all is well. And tasty! Thankfully the amounts were perfect. So for those of you doubling the recipe like I did, cut down a little on the mayo and sour cream. 1 3/4 cup mayo and 1 1/2 containers of sour cream should do the trick. Everything else remains, 2 packs of Knorrs leek soup mix, 2 cans waterchestnuts and 2 10 oz. boxes of chopped spinach. I only serve this dip with Kings Hawaiian Bread. OMG! They were meant to go together, try it, you won't be sorry!

Alyson's Broccoli Salad

You DON'T have to use anything you don't want to use really. This recipe calls for R A I S I N S, for a reason. They belong in this recipe. I've made it both ways and raisins are the way to go. This is a wonderful salad I have been making for years. Always turns around those broccoli haters, even I was a raw broc hater til I found this recipe. Thanks John!

Goldenrod Eggs

Never heard of Goldenrod Eggs so I was intrigued and had to try it. Definitely not something we learned in Home Ecc in 1980's southern california. It was fairly quick and yummy comfort food. Not a simple weekday breakfast in my book, that's why I just had it for lunch! It was good, a little odd, but good. Thanks for sharing!

Crunchy Peanut Butter Balls

These just didn't work out for me. Tasty, even in a pile with a spoon. I think I "LOST" my chocolate in the melting process. From there I just kind of tried to stick it on, didn't work so well. I'm sure they would have been great if not for that. The photo is gorgeous!

Juiciest Hamburgers Ever

Flowed thie recipe pretty closely, I omitted the garliC and cayenne pepper, just doesn't go in a burger for me.From the reviews of it being bland I added a shake or two of Old Bay seasoning and a shake of Braggs seasonings. WOW! First of all after I threw them on the grill and let the first side cook for about 5 minutes I opened the lid and there was a pool of juice on the burger. Yum! Finished them off, threw on some cheese and some grilled onions and this turned out to be ONE OF THE MOST FLAVORFUL BURGERS I'VE EVER HAD! Go Figure! Thanks for the recipe.

Monte Cristo Sandwich - the Real One

YUM! great recipe! My mom used to love these and turned me onto them when I was a kid. I never can seem to find them on menues where i live. This one fit the bill. I also substituted 1/2 & 1/2 for water and it was perfect. Served with powdered sugar and seedless raspberry jam. NOM NOM NOM

Banana Cream Pie I

I would give it 5 stars but I used reviewers tips which changed the original recipe some. Well, I would still give it 10 stars if I could! It was hard not to toss the pizza and just have this for dinner! OMG! This pie is sooo yummy! I even used a crappy frozen pie crust (i know, shame on me) but it was still sooo good. I used 3 Tablespoons cornstarch instead of flour, used a Tablespoon of vanilla and did not bake it. I did chill for 3 hours. I plan on making another one very soon and will go the extra mile to make a crust from scratch, this pie deserves it! UPADTE AGAIN; Made pie again today, this time made homemade pie crust IV, prebaked it for 10 minutes. Hope it turns out good. While that was cooling I made the pie, although I FORGOT TO ADD THE CORNSTARCH. Ummmm forgot to add flour too. So far it looks great, it's chilling. Hope it turns out as good as the first one, or I'll have to make other plans for dinner! What a numbskull.
