Impossible Coconut Pie II

Loved this. made several changes for what I had on hand; used a can of sweetened condensed milk in place of sugar (stirred it into the milk), used a tablespoon+ of vanilla, used on 3 eggs, replaced half the butter with coconut cream and used 2 cups + of sweetened coconut shreds. I know, its a lot but its what I had, followed the rest of the recipe and it took an hour and ten minutes to get beautiful golden brown and set. let it cool for 45 minutes and just snuck a piece. It IS SO GOOD!!!! It is a little custardy and really did make its own crust!!!! uhoh. I just made the mistake of adding a bite of banana pudding to this and OMG, I heard angels sing. Done.

Best Chocolate Chip Cookies

Dough was oddly dry, chips wouldn't stay in the mix. Cookies came out the same way, dry and a little cake like. Even after adding a little more hot water. Hmmm

Easy French Dip Sandwiches

Updating but can't seem to access my first review, so it's here. This was great, nice idea for warming up the meat, adding it to the au jus in the sauce pan, this sandwich was excellent and exactly what I was looking/craving for! Thanks for sharing! Simple and YUM!

Blue Cheese Ball

This was great, made it for Thanksgiving and the family ate it up! I used Costco crumbled gorgonzola blue cheese and it was fantastic! Rolled it in a combo of chopped pecans and walnuts with some dried parsley mixed in for color. Getting ready to make again today for a holiday party. Super easy! Thanks for sharing.

Warm Blue Cheese Dip with Garlic and Bacon

SO far I can only give 4 stars, I just mixed it all together and haven't cooked it yet. Cold tastes REALLY good, tempted to not even bake it, but I will tomorrow. I only had whipping cream and thanks to another reviewer's advice, saying cream, milk or 1/2&1/2 is ok, I used it and it seems fine. Added a little extra blue as my siblings are huge fans. I'll update after I've baked it tomorrow.

Flourless Chocolate Cake I

Was happy to find this pretty simple recipe for my glueten free friend. It was simple and turned out delicious tho ugly. I LOVE the suggestion of small glass of port with it! YUM! I skipped the water bath, baked for 45 minutes and put it in the fridge immediately. It was NOT coming out of the pan no matter what I did, so I just sliced it and "scooped" it out onto plates. Everyone loved it! Made it for a casual family gathering so it didn't really matter what it looked like. If it were a more formal occasion I would have gone the whole nine yards; water bath, parchment paper, spring form, yada yada. But it was a bit last minute and who cares? Chilled for about 4 hours, had a smooth consistancy. Next time I will go the extra mile. Will also probably omit and egg or two. Baked in a 9" nonstick cake pan.Oh ya, I used one bag semi sweet chips and 3/4 bag milk, perfect! Also only had one stick butter, used cirsco to make up the difference. This is a very forgiving recipe! UPDATE; second time around, same pan, did the water bath, used 3 eggs and 3 whites, one bag dark chocolate chunks and half bag semi-sweet chips, chilled immediately. Much prettier this time, a little bit smoother consistancy, but still not comin out of that pan! Well, it is, just not onto a serving platter, only onto my plate and into my mouth! Maybe a little better than the first try, either way still outstanding!

Cake Mix Cookies VIII

These were just eh. I followed the advice and added 2T of oil and some vanilla and they still turned out pretty dry. Not what I was looking for. I had my heart set on chewy cookies, but live and learn! Not like I threw them away or anything.

Ken's Perfect Hard Boiled Egg (And I Mean Perfect)

Awesome job Ken! I have always had to let the eggs cool for hours to get them to easily release the shells. Hate that picky, piecy shattered mess that sometimes takes half the egg with it! I only had cider vinegar but it worked beautifully!!!! These were the easiest peeling eggs I have ever seen and I have peeled a S*@T ton of eggs in my day. Thanks for sharing.

Mom's Best Peanut Brittle

Hopefully the third time will be the charm. I made two batches that did not turn out whatsoever. They never got hard or a good color. Have never made this before so it was a stab in the dark, also I didn't have a candy thermometer. BUT I WAS JONSE'IN FOR BRITTLE! Pretty sure I got a winner this time, stirred for 12-14 minutes, thats the trick. I'll let ya know how yummy it is. Thanks for sharing. UPDATE: Ok, they're done, one outside for a few minutes and one straight into the fridge for a few. The first batch I did was good, hard and crunchy with a little stick to the teeth going on. Batch 2 OMG!!!! This batch I let get a little darker carmel color while still on the stove. Was a little faster with the soda and butter, mixed up quick and poured onto sheet. WOW!!!! Finished product is a little darker than batch 1 and 1000 times better!!!! Dinner is served!

Banana Cream Pie I

I would give it 5 stars but I used reviewers tips which changed the original recipe some. Well, I would still give it 10 stars if I could! It was hard not to toss the pizza and just have this for dinner! OMG! This pie is sooo yummy! I even used a crappy frozen pie crust (i know, shame on me) but it was still sooo good. I used 3 Tablespoons cornstarch instead of flour, used a Tablespoon of vanilla and did not bake it. I did chill for 3 hours. I plan on making another one very soon and will go the extra mile to make a crust from scratch, this pie deserves it! UPADTE AGAIN; Made pie again today, this time made homemade pie crust IV, prebaked it for 10 minutes. Hope it turns out good. While that was cooling I made the pie, although I FORGOT TO ADD THE CORNSTARCH. Ummmm forgot to add flour too. So far it looks great, it's chilling. Hope it turns out as good as the first one, or I'll have to make other plans for dinner! What a numbskull.

Monte Cristo Sandwich - the Real One

YUM! great recipe! My mom used to love these and turned me onto them when I was a kid. I never can seem to find them on menues where i live. This one fit the bill. I also substituted 1/2 & 1/2 for water and it was perfect. Served with powdered sugar and seedless raspberry jam. NOM NOM NOM

Juiciest Hamburgers Ever

Flowed thie recipe pretty closely, I omitted the garliC and cayenne pepper, just doesn't go in a burger for me.From the reviews of it being bland I added a shake or two of Old Bay seasoning and a shake of Braggs seasonings. WOW! First of all after I threw them on the grill and let the first side cook for about 5 minutes I opened the lid and there was a pool of juice on the burger. Yum! Finished them off, threw on some cheese and some grilled onions and this turned out to be ONE OF THE MOST FLAVORFUL BURGERS I'VE EVER HAD! Go Figure! Thanks for the recipe.

Crunchy Peanut Butter Balls

These just didn't work out for me. Tasty, even in a pile with a spoon. I think I "LOST" my chocolate in the melting process. From there I just kind of tried to stick it on, didn't work so well. I'm sure they would have been great if not for that. The photo is gorgeous!

Goldenrod Eggs

Never heard of Goldenrod Eggs so I was intrigued and had to try it. Definitely not something we learned in Home Ecc in 1980's southern california. It was fairly quick and yummy comfort food. Not a simple weekday breakfast in my book, that's why I just had it for lunch! It was good, a little odd, but good. Thanks for sharing!

Alyson's Broccoli Salad

You DON'T have to use anything you don't want to use really. This recipe calls for R A I S I N S, for a reason. They belong in this recipe. I've made it both ways and raisins are the way to go. This is a wonderful salad I have been making for years. Always turns around those broccoli haters, even I was a raw broc hater til I found this recipe. Thanks John!

Best Spinach Dip Ever

Yep, best ever! This was my moms go to spinach dip recipe for years, though she used Knorr's Spring vegetable soup mix. I had to try the leek and am glad I did! Sooo good. I did double the recipe, planning on using the entire box of spinach of course, so I used two to double the recipe. I did notice that the full two cups of mayo and two containers of sour cream looked like it was gonna be way too much amd possibly make it runny, so before mixing I removed about a half cup mayo and a cup of sour cream. I just finished mixing it all up and it's getting happy in the fridge. I will update if it turns out too dry and I have to add back the mayo and sour cream. But boy did it taste GOOD! Thanks Shawna's Dad! ***Update! next morning, all is well. And tasty! Thankfully the amounts were perfect. So for those of you doubling the recipe like I did, cut down a little on the mayo and sour cream. 1 3/4 cup mayo and 1 1/2 containers of sour cream should do the trick. Everything else remains, 2 packs of Knorrs leek soup mix, 2 cans waterchestnuts and 2 10 oz. boxes of chopped spinach. I only serve this dip with Kings Hawaiian Bread. OMG! They were meant to go together, try it, you won't be sorry!

Caramelized Baked Chicken

Liked it, a lot. Didn't LOVE it, but liked it very much. Thought it would be a tad sweeter. And maybe a tad tangier with the ketchup. So, it was good, not great. Cooked up nicely for sure, I usually bake my chicken this way, to come out sticky and crispy but super moist inside. Thanks for the recipe! Will attempt to tweek it to my taste.
