Awesome Slow Cooker Pot Roast

I love making this. I use the leftovers to make pot pies and it's always a big hit at my house. I just wish I could figure out a way to make the roast stay moist... I pan sear ahead of time but still no luck.

This is very easy and very good. Made some changes to lower the salt as others recommended... and while i LOVE pepper (and I mean LOVE), I never questioned the amount but I thought it was a bit much and have lowered it since....

Delicious Black Bean Burritos

Delicious! I have made this several times now, different every time.... you can't mess it up. Ive added corn and spinach with some cumin and jalepeno's and it was so good. I've also done it without corn and added a frozen steamer wild rice mix. Always use low fat cream cheese and have never noticed the difference.

Cinnamon Swirl Bread

This is very good, very moist....reminds me of friendship bread without all the kneading bags, adding milk and waiting. I have made it twice now. The first time I couldn't wait overnight, so it was never wrapped in foil and I thought it was delicious. The second time I waited and wrapped it in foil and the taste was the same but it didn't seem as crumby. Quick and easy, nice for guests.

Roast Beef Sandwich Roll

This was awesome! BUT I really didn't have most of the ingredients (which shows just how versatile it is). I took advice from others and bought the pre-made pizza dough and higher quality roast beef from the deli (it really does add salt even when it's better quality). I didn't have anything else so I used a mixture of shredded pepperjack and cheddar cheeses, added mushrooms, spices from recipe, and giardiniera (hot peppers) to taste. I was so pleased at how easy this was and how AWESOME it tasted. You can change this up so easily with other lunch meats.... I even thought about doing a reuben version. I will warn that the pizza dough cracks when you take it out of the roll container and it's hard to patch so use caution : )

Tangy Slow Cooker Pork Roast

This was very good. I cooked four chops, bone in since I didn't have a roast on hand. I also made a little extra gravy to make sure everything was covered in the crock pot. My husband really liked this! Served it with buttered and garlic egg noodles and some veggies.

Boston Cream Pie Minis

These were very delicious! One box of cake mix was able to make about 60 mini cupcakes! I needed to make extra cool whip/pudding mixture though. I just put the mixture into a ziplock back cut the end off one corner and applied it that way to give a nice, fancy look; I did the same thing with the topping! If you make these, they won't last long at all! Super easy and so good. I might try them with pistachio pudding or banana next time.

Creamy Potato Leek Soup II

This soup is so good! I like mine really thick so I mashed some of the extra potatoes I put in! I also added some carrots, celery and mushrooms while using only half the bacon (1 pound would have dwarfed the other flavors). I didn't have cream so I used half and half and it came out great.... Had to add a little corn starch at the end to make it extra thick and creamy. YUM!

Beth's Spicy Oatmeal Raisin Cookies

I thought these cookies were absolutely delicious! I substituted the raisins with craisins and added white chocolate chips to half the batch and with the other half i used semi sweet chocolate chips and pecans... both AMAZING!! this is basically the same recipe on the quaker oats box, but who would have thought the clove would make such a big difference for that added zip?! my new favorite!
