Meatloaf Roll

The only reason I am not giving this a 5 star rating is because of the time/effort to put the meal together. It tasted great, but it was just way to time consuming for me. I might try it again, but next time I will omit the homemade sauce and use a basil marinara from a jar instead ;-)

Chicken Breasts in Caper Cream Sauce

YUMMMMMMY... I've been trying different recipes from this site about 3-4 times a week for the past year or so and this one is by far my FAVORITE!!!!! I did add some freshly minced garlic in with the butter. It added a nice little extra flavor to the sauce!!! Since I only cook for 2 (me and the hubby), I only used 1/2 tsp of the spices to cover only 2 chicken breasts instead of the 4 that the recipe calls for. The amount of sauce this recipe makes is PERFECT for 2 breasts. I would suggest doubling the sauce if cooking for 4. I served the chicken over penne and sprinkled with parmesan!!!! OUTSTANDING!!!!!!!!!!!

French Onion Soup Gratinee

This was definitely a great tasting soup! However, my sister-in-law is a professional chef and owns her own catering business. One of her signature items is her French Onion soup. I have to say that hers is still our favorite :-)

Chicken Noodle Casserole II

I hate to be negative, but this was barely even edible. The sauce tasted horrible... The only reason we were able to eat it was because we were literally starving before dinner. DEFINITELY NOT a keeper, sorry :-(

Russian Mushroom and Potato Soup

EXCELLENT! Even my hubby loved it, and he is not a fan of potato soup. The only things I changed were that I used green onion instead of leeks (to cut down on cost), and I used less butter and 1% milk to reduce the calorie count. Will definitely make this again!!!

Chicken Salad

This recipe was EXCELLENT! I made just a few minor changes (based on what I had in my pantry). I omitted the water chestnuts and added about a tablespoon of slivered almonds instead to keep the crunchiness. I used mayo (as opposed to miracle whip). I was also out of minced onion, so I substituted with chopped up french fried onions instead. I will DEFINITELY make this recipe again! Thanks for the submission Cathy... it was YUM YUM!!
