Quiche Lorraine I

This was so light and so delicious, I will definitely make it again! I used spinach instead of bacon and half and half instead light cream. My crust was a store bought whole wheat which I prebaked for about 7 minutes at 425 degrees so I would not end up with a soggy bottom.

Black Bean And Corn Salad II

I've made this one about once a month. It's quick and delicious! I don't like avocados so I leave them out, but other than that it's great. Good for picnics.

Eggplant Parmesan I

Delicious recipe! I made it for my boyfriend and he had 2 helpings at dinner and then took the rest for lunch the next day....I cooked it again later that week and it was just as yummy. I used Barilla lasagna and casserole sauce. I suggest using a nonstick pan to cook the eggplant and add oil a little at a time because the eggplant soaks up oil fast and if you put it all in at once then the first batch of eggplant will soak it all up.
