Moist Chocolate Muffins

These turned out pretty well. I did not have any chocolate chips, but, had an abundance of Oreo cookies. So, I smashed up the cookies and used them in the same manner as the chocolate chips. These were served at a farewell party with chocolate frosting and they were a huge hit. It is a good foundation recipe that can be manipulated however you like!

Veal Scaloppini with Lemon Cream Sauce

This was excellent. I have had my fair share of veal with lemon cream sauce and this is the first time I have made it at home. I used milk instead of heavy cream and served it with spaghetti. I also added capers to the sauce. It was fantastic and hubby loved it. I will definitely be making this again. I especially loved how quickly this meal came together as I teach all day.

Chocolate Chocolate Chip Cake Cookies

Best cookie recipe I have come across in a long time. They cooked up perfectly round, made exactly 2 dozen and were moist and chewy. Fantastic. Will definitely be making these again.

Roasted Garlic Peppercorn Sauce

This recipe was good. As mentioned by other reviewers, cook the butter and flour together first, then add milk. I found that 1 head of garlic only yielded a slight garlic flavor. Next time, I will roast 2 heads and try that. My husband who is typically not a fan of cream sauces liked this because of the heat from the peppercorns (I added extra to satisfy him). The kids did not like this recipe.

Zucchini Bread with Coconut and Chocolate Chips

I have tried several zucchini bread recipes lately. Most did not turn out. This one did turn out, but, 1 tablespoon of baking soda was too much. The loaf did rise well, but, it had a very soda like taste to it. My kids devoured it though, even my picky eater that will not eat anything that looks like it may resemble a vegetable. I dropped my zucchini into the food processor and processed until it was in very small pieces. It was much faster than grating the zucchini.

Lentil Quiche

This recipe needed a lot of help to get the flavor going. The texture was good, but, we had to fresh ingredients to get any amount of flavor in the dish. It fell flat. Not on my list of things to make again.

Pizza Muffins

This is a great foundation recipe. I cannot give it a five because I changed a lot of it. I stuffed my muffins with pizza sauce in the middle by putting part of the batter in the muffin tin, added sauce, and placed the rest of the batter on the top. Then, I drizzled more sauce on top of the muffin. This is a great recipe because it is fast, easy, and versatile. My family devoured these muffins, including my picky toddler.

Alfredo Sauce

Very good sauce that is very versatile. I did not have nutmeg and instead used thyme and basil. I used only parmesan. It turned out great and my picky four year old devoured it. Will definitely make it again.

Peanut Butter Oatmeal Cookies

I like my cookies thick. These cookies spread a lot. I followed this recipe exactly and I bake a lot. I was surprised that they spread as much as they did. The recipe did not yield 36 cookies. The only reason I am giving this a 1 is because the tasted okay. I will be looking for a different recipe next time.

Salmon Burgers with Lemon Basil Mayo

I cannot rate the salmon burger as I only made the lemon basil mayo and served it on turkey burgers. The lemon basil mayo is very delicious. It would be good on chicken burgers, veggie burgers and poultry based sandwiches. Delicious. Will make it again.

Actually Delicious Turkey Burgers

I tricked my husband with these burgers. He thought they were beef at first. I had to laugh at that one. But, seriously, these are delicious and I will make them again and again. I do not like ground beef, my husband loves burgers and this is the perfect way to make us both happy. Thanks for sharing.

Zucchini-Chocolate Chip Muffins

I am normally a big fan of zucchini muffins like this. I could not find my usual recipe, but found this one with rave reviews and gave it a try. I followed the recipe exactly, but they were dry, bland and there was far too much cinnamon for my liking. The only reason I gave it a 3 is because they were still all eaten. Normally I puree the zucchini so the kids do not see it, so the shredded zucchini was a tough sell for the kids; although they still ate them. I have found my original recipe and will go back to that one from now on.

Basil Vinaigrette Dressing

Fabulous! I just made this dressing for a cold pasta salad. It was perfect for my summer picnic. It is a touch sweet and I reduced the amount of honey. I also put this dressing in the food processor to break down the garlic and basil. Let it sit a bit before using it to allow the flavors to blend. I will definitely be making this one again.

Slow Cooker Cranberry Pork

This is probably one of the better slow cooker recipes I have used in a long time. The sauce was tangy and sweet, the pork was unbelievably tender. I was surprised how so few ingredients can make such an excellent meal. I doubled the sauce recipe as I have about 4 lbs of port. There was plenty of sauce left to reduce with corn starch to make a thick and delicious sauce. I served this with sweet potatoes and there was absolutely nothing left at the end of the meal. My friends are still raving about it because it got their one year old to eat meat.

Pork Medallions with Port and Dried Cranberry Sauce

This was excellent. My husband usually does not like sweeter pork dishes, but the port and vinegar in the sauce does cut the sweetness down. I did find that the sauce was quite acidic so I added a bit of brown sugar to reduce the acidity. The pork was tender and my only suggestion is to make sure that your shallots are really minced, it makes the sauce more smooth.

Quick Chicken Divan

When I make something for the first time I always ask myself if the dish is worthy of being served to guests. If it isn't, then I likely won't make the dish again. This one did not make the cut. I followed the recipe exactly and found the dish to be bland and it tasted artificial. The only plus on this recipe was that it was fast.
