Southern Grilled Barbecued Ribs

Great cooking method! I baked in the oven a total of about 2 1/2 hours before grilling. We have a smoker, and we have made ribs by smoking for hours and hours (8-12). These ribs were far better than on the smoker.

Sesame Beef

I substituted 2 T fish sauce + 2 T water for the soy sauce. Then before I cooked the meat, I strained the liquid off it, added a couble tablespoons of cornstarch, and then cooked in a pan with hot oil. This helped the meat get a little crispy on the edges instead of steaming. Then the reserved liquid I cooked with extra veggies, and I mixed it all together and sered it over rice.

Peanut-Tamarind Sauce

Flavors didn't seem to meld well--I don't think the tamarind goes well with peanut. It was heavy, which is uncharacteristic of all other good Thai food we have had. I won't make this again.

Cinnamon Bread I

Doubled the topping, mixed wet & dry ingredients separately first, then mixed together with a light hand like you would do for muffins. Also subbed a small amt of whole wheat flour for the white. Tasty!

Feta and Olive Meatballs

These were great! We also used Kalamata olives instead, and subbed a variety of dried herbs in place of the fresh parsley. We served these with Molly's Mouthwatering Tzatziki--a perfect combo.

Peach Pie

Set up perfectly (I turned off the oven and left it in to cool). I just followed the recipe--no cinnamon or anything. I think next time I'd add a dash of ginger & nutmeg or something to awaken the flavor a bit. Very good though!

South Texas Carne Guisada

I increased the paprika to 1 Tbsp, cut the powdered garlic to 2 tsp, added one yellow bell pepper, and DID use flour to thicken at the end. I also added a handful of fresh cilantro at the end. Served over rice with cheese, sour cream, and cayenne.
