Italian Vegetable Soup

This is a great, hearty soup for the winter. Easy to make and the flavor was better the second day. I used all of the ingredients but I don't measure when it comes to soup so I add lots of carrots, celery, etc. Also I used frozen vegetables instead of canned. It was too thick for me so I added extra beef stock. CarolL-CA

Slow Cooker Scalloped Potatoes with Ham

I use smoked ham slices and didn't measure anything. I like lots of all of the ingredients. I put everything into one bowl. To ensure the potatoes got cooked, after I put it into the slow cooker bowl, I put it into the microwave for 15+ minutes and then into the slow cooker. Every drop was gone. This is a keeper.

Cheesy Scalloped Potatoes with Ham

First time making this, I took it to a pot luck and not a drop was left. On dishes like this, I seldom measure so I know I added a lot more cheese but was careful with the garlic powder. Two easy tricks: Just mix the potatoes with the cheese mixture and put it all in the crock pot. Then I poured the mushroom sauce on top and worked it through the dish. Saves a lot of unnecessary fussing. Also, I put the entire dish in the microwave for 20 minutes. It ensured that the potatoes were fully cooked without pre-cooking them. I let it cook the full 4 hours which made it cheesy. This is a keeper - winter or summer.

Caramelized Bacon

This was not my idea of bacon. It was sticky, way too sweet and tough. I'll stay with the natural flavor.
