Potato Soup Mix

I'm not quite sure how I feel about this soup. It tastes good but when I think of potato soup, I expect something super thick but this came out extremely runny using the ratio of mix to water that they give you. I ended up adding more mix to thicken it up but it's still pretty ruuny.

Basic Crepes

i love the way that these turn out but only gave it 4 stars because the directions are a little upside down. I tried it as the recipe directs exactly and came out with lumpy batter despite all my attempts to fix it. I tried it again this morning being sure to this time mix all the wet ingredients including eggs together and then added in the dry and they came out perfectly. I also didn't bother to grease my non-stick pan as I noticed that the first time round my crepes were a little greasy. This time they turned out much better without greasing the pan. I got about 8 crepes from my batter in case you're wondering how many "4 servings" will give you. I might try them next time with a little more water to make them easier to swirl in the pan.

Fudgy Brownies I

I didn't like these at all. I made them by mistake when I clicked on the wrong recipe and won't be making them again... this recipe is being deleted from my recipe box. Not at all sweet despite two cups of sugar... very bland.

Mock Chicken

I always bought those little "chicken nuggets" in the veggie section that are made from soy. Unfortunately where I live they are really expensive so this is a great alternative. I followed the instructions, dipped the pieces in egg and then a quick round in the bag with some shake-n-bake and they are fantastic. Next time I'll find a better breading recipe but for the first try, shake-n-bake did the trick.

Jeanie's Falafel

These were yummy but very messy to make. Everything was neat and tidy until the frying started. I don't have a deep fryer so I used the stove... many of them fell apart during the frying process and I felt like I was losing gold. I'll make a couple of adjustments next time, mainly baking them instead of frying by lining a baking sheet with foil, brushing oil on the sheet/foil, forming small patties instead of balls and brushing the tops with oil. Bake for 15 - 20 minutes, flipping halfway between to prevent burning. Healthier and cleaner.

Pasta with Tuna, Sun-Dried Tomatoes, Artichoke Hearts, Lemon, and White Wine

The artichokes in my cupboard were sadly expired so I omitted them but will definitely add them next time. This recipe was simple and straightforward with loads of flavors. It will definitely be made again in my house, next time WITH the artichokes. As a vegetarian, I left out the tuna. The dish was still delightful.

Easy Biscuit Mixture

Great recipe but it would be nice to see how you use this mix to make biscuits, crusts, pancakes, etc. I winged it and my biscuits turned out good but I have ever used bisquick so I didn't know to turn the mixture into a finished product without some research.

Chai Tea Mix

This recipe is fantastic! I followed it almost as is... I chose to add vanilla to the sugar and omitted the french vanilla powdered non-dairy creamer in order to keep costs down a little more. Also, in Canada I'm not even sure if you can get instant tea. If you can, I've never seen it nor do I understand the point of it since tea takes only a moment to steep. Instead, I did what another reviewer suggested and steeped a cup of tea the old fashioned way and added in the powdered mix. It was fantastic and considering how much this recipe makes, it's definitely worth the cost of everything involved, cardamom and all. Will make it again as soon as I run out.

Best Chocolate Chip Cookies

These were quick, easy and super good. I cut the batch down to 12 servings but easily got about 22 cookies out of it. I omitted the nuts since I didn't have any. I did notice like others that the cookies don't really spread out so when I put my second pan into the oven, I squished them down a bit so the were a little flatter. The second group baked more evenly and thoroughly than the bigger, thicker ones that preceded them. I also baked both groups longer than the recommended time since mine were very pale white on top and I like them a little more golden than that. Very tasty and so simple so I will make again.

Nutella® Cheesecake

I liked this recipe . . . sort of. I found the finished product to be too heavy. I prefer a very light fluffy cheesecake and this was very dense. It tasted great though and my guest loved it. I used a chocolate crumb crust with mine instead of graham cracker. I'd make this again but would need to lighten it up a bit.

Orange Herb Roasted Chicken

I am a vegetarian (or flexitarian rather) who has never cooked any sort of meat other than ground beef. For my sister's birthday I decided to cook dinner for my entire family and this is what I settled on. A little daunting at first for a first-timer like me, the recipe was actually really simple and straightforward. I followed the recipe as is and it turned out fantastic. I even tasted it just to see what it turned out like and actually liked it so much that I had to have a second bite. I may eventually make this one again but since I don't eat meat in my own home, it's not going to be for quite a while. One note: for someone like me who has never done something like this before, it would have been helpful to know to wash the chicken and pull out any feathers that might still be lurking. Had my sister not been there watching me for entertainment value, I wouldn't have known this little tidbit of info. Thankfully she told me BEFORE I started getting the rest of the ingredients involved.

The Best Thai Peanut Sauce

This recipe was fabulous! I accidentally put in three times the amount of ginger but it's still delightful anyway. Next time I think I would add more coconut milk as mine turned out very very thick and I'd like something that would be a little more saucy. But taste . . . peanut heaven.

Creamy White Wine Sauce

Waaaay too much salt! Next time I will use half. I ended up adding sugar to this to counter the salt a little and then it tasted ok. Will not make this the same way again next time. Other than the salt issue, this recipe is quick and decent but needs some punch to it.

This was really simple and delicious. I left the dates out since I really don't like them. I agree with others that it is quite sweet. Not sugary sweet really but could be substituted for a dessert if needed. I'd make it again.

Grilled Orange Chicken

This was so easy! I am mostly vegetarian and have been for years so my experience cooking meat of any kind is exceptionally limited but this was still so simple. I did it in the oven following the directions that someone else gave here: bake at 350 covered for 15 minutes on each side, then uncovered for the remaining 20-30 minutes at 400, flipping occassionally and brushing with sauce each time you flip. My pan had lots of juices at the end of it and the chicken itself was very moist. You could really taste the orange flavor and the balsamic gave it a nice tanginess. I left out the sage because I just didn't have any and the chives because my dad hates them. I served it with almond rice pilaf from this site, honey-glazed carrots and roasted baby potatoes (I love my carbs). My entire family loved it although my sister noted that she would cut down on the balsamic or use a little more marmalade. I, however, loved it as it was and will definately make again soon. One last thing, I didn't use Garlic salt as I didn't have any and used a garlic paste instead but instead of rubbing the chicken with it (my hands would smell for days), I added about a teaspoon of the garlic paste to the sauce.

Grandma's Lemon Meringue Pie

UPDATE: I baked this pie in the evening and served it the following night. The crust had turned exceptionally soggy and was rather disgusting as a result. The taste was still fantastic but soggy crust as a result of the filling isn't a good thing. The merangue had also started separating from the lemon filling. I'm not sure if this is a normal lemon meringue pie issue but it wasn't very pretty. ORIGINAL REVIEW: I really liked this recipe with regard to taste but it makes absolutely no mention as to how long you should let it cool for and how (ie. in fridge or not). I ended up cooling it for about an hour on a rack and then cooling it further in the fridge overnight. I was concerned about it being runny (liquid kept running all over the place during the cooling process as all my floors are very uneven in my vintage apartment so I actually had to get a level out to find the most even place in on floor and cooled it on a table in the middle of the hall) so I tried a piece this morning and it was fantastic. It set properly but the meringue had shrunk quite a bit although I think that this may have been my fault due to not beating long enough. Also, a lot of users said 3/4 cup of lemon juice. I got a lot more than that out of my two lemons but it wasn't too tart at all so I was happy. Overall, good recipe but a few things needed clarification. Will make it again.

Peanut Butter Cupcakes

These tasted good but were pretty heavy and dense for a cupcake. They seemed more like muffins to me. I'd make again if I could figure out a way to get them to be less like a muffin and more like a cupcake.
