African-Style Oxtail Stew

Wow this was a big hit! This was my first time cooking oxtail, not to mention, I had never tried it before either. Wow was so good! The only thing I did different was add some carrots and an extra can of kidney beans. Doubt it did much to change the flavor, but 1 can didn't seem like very much and carrots because why not? :) Excellent recipe! Will be making this again!

Banana Waffles

The taste was good, but I had a lot of problems getting them to cook all the way through without burning. If I took them out when they where a (dark) golden brown, they were undercooked in the middle and made it seem like I was chewing a banana flavored sponge. The only ones that were cooked all the way through were burnt on the outside. I also had a big problem with them sticking to the waffle iron. Both issues I've never had before. Was really looking forward to this recipe, but ended up being disappointed. :(

Brownie cookies

You will not want to share these cookies! Oh boy where these a hit! However, I won't be making these very often as it wouldn't be very long before I wouldn't be able to fit through the door. They were very hard not to eat. They lasted a grand total of 2 hours here. (to be fair there was 6 of us eating them)

Banana Banana Bread

Irish Soda Bread I

This bread was so easy to make, and was delicious! The two loafs didn't last more than 3 days. I made it with raisins, but am looking forward to trying cranberries, cherries and raspberries. Was excellent toasted with a little butter for breakfast!

Beef and Irish Stout Stew

The first time I made this was for St. Patrick's Day a year ago. We loved it! I have made it countless times since then. The reason I gave it 4 starts is... The first time I made it, I followed the recipe exactly, and it just seemed to be missing something. (although still very good) I have played around with the recipe a bit, and tailored it to our tastes. In addition to the original recipe I add... 3 to 4 Bay Leaves and about 2 tablespoons of Worcestershire Sauce. Guinness Extra Stout is the beer of choice for us, 1 bottle, and I will add a little extra tomato paste if it needs to be thickened up. All in all, this is a top notch stew!!!
