German Chocolate Cake Frosting II

Awesome. Didn't add cornstarch-just stirred mixture continuously for about 10 minutes on medium until thickened. Received great reviews!!! Will definitely make again.

Really Creamy Fettuccine Alfredo

Great. Only negative is, I can taste the cream cheese more which regular alfredo does not have. This was still good nonetheless. Used light better, lowfat cream cheese, added a squeeze of lemon wedge, and upped the basil and garlic for our liking. I used the pasta water to loosen up the alfredo when it became too thick from setting. My husband LOVED this. Said it was the best alfredo sauce I'd ever made. Definitely make again.

Naan

Quite honestly, I think this is a really good pizza dough. We did like this, but just not as good as we like-it was good just not a traditional tasting naan. I will make this again, since it is the best I've found. Plus, now I have a new pizza dough recipe. This is very versatile and can be seasoned according to one's preferences. I took the suggestion of one and added sugar to my yeast and warm water in order to proof. Let this rise in a slightly warmed oven. I grilled this on my George Foreman. Also, I used AP flour as I did not have bread flour. This is a good basic dough.

Meat Filled Manicotti

Delicious! I used Ricotta (didn't have cottage cheese on hand). But I know for a fact cottage cheese is wonderful in Italian dishes. This is a little time consuming, but can be made up in advance-which is a positive. Will add seasoning to the meat next time. Other than that, awesome!

Quick and Easy Pimento Cheese

This require A LOT of pimentos. I would halve the pimentos used. Also, used only mild cheddar (hubby doesn't like sharp). Definitely use again. Taste like the good old classic.

Basic Crepes

Very good. Make sure your pan is hot enough. I made the mistake of a pan that was too cool. Also, I didn't have milk to I used sour cream and extra water as a substitute and it worked out. Well definitely use this recipe again.

Buffalo Chicken Dip

This stuff is awesome! I made this for a potluck at work. Great & can be assembled the night before: I melted on the ingredients (except the cheddar) on the stovetop, then, put into a 9x13 casserole dish, topped it with the cheddar, covered it, and left in the fridge overnight. Then, toted it to work and popped it in the oven when ready. Also, used 1 pkg lowfat and 1 pkg fat free (that one was accidental, but worked out well) cream cheese & light ranch. No one could tell it was "healthier". Also, my cans of chicken were 12.5 oz each (it's what I had). I serve mine with tortilla chips. Love this stuff and it's not super spicy, the cream cheese & ranch cool it down but still love the yummy flavor.

Cinnamon Raisin Bread I

Delicious! Definitely make again...the flavor is awesome! However, the reason for only 4 stars is b/c the texture was not as firm as I would have liked. But that being said this is sooooo yummy.

Cranberry Almond Biscotti

These are good. First attempt at biscotti. The gooey texture of the batter kind of suprised me a bit, but no worries: the biscotii came out great. Definitely use almond extract and not vanilla. This makes a huge difference. I followed the recipe but took the advice of another and added orange zest. I also used half splenda half white sugar. Next time I may add semi sweet chips.

Dietetic Banana Nut Muffins

These are a good low-cal option to get through those muffin cravings. However, while good, they are not "oh my gosh, amazing". I will make these again b/c of the good taste w/ lowcalories. My husband (picky eater) ate them and could not tell they were made with splenda :). I added extra applesauce to mine. I will make again.

Fluffy Pancakes

Awesome. Definitely a keeper. The batter will be thick before making-don't be alarmed...it is suppose look like that. So delicious. Best homemade pancake recipe! (Oh, I did leave out the butter, per other reviews.)

Cake Balls

Okay...really yummy, but A LOT of work! I attempted to make 3 flavors at once..and after about 2-3 hrs, I finally said "I'm done!" ha ha. They are quite tasty, though, for me...too much work! Maybe these just take patience (which I don't have a lot of sometimes). I highly recommend lemon cake with cream cheese frosting dipped in white chocolate-so good. I probably won't make again, not b/c they don't taste good (they do) but b/c of all the work.

Raspberry and Almond Shortbread Thumbprints

Tastes like a pop-tart. Really. I made these and was pretty excited, but was underwhelmed once I tasted the cookies. If a home-made, better-for-you version of a pop-tart is what your looking for than go for it. Honestly, it just wasn't what I was looking for.

Italian Style Pork Chops

Just not my thing. Made this and only marinate 10-15 minutes. Made them on my George Foreman indoor grill. However, something about these I just didn't like. After a few bites, the flavor became way too overpowering and "one note"....almost didn't finish my chop. Just not for me.

Basil Caesar Salmon

Good recipe. Falls into the "good but not life-changing" category. The seasonings were a milder than I expected per the other reviews. I thought the flavor could have actually been stronger. Maybe it was my croutons? Anyway, I enjoyed this recipe. However, my husband just thought it was okay. He did not care for the caesar flavor being paired with fish. For that reason, we will probably try this on chicken next time.

Mango Blueberry Muffins With Coconut Streusel

I'm only giving this 3 stars b/c i was disappointed in these muffins. However, I do believe part of the disappointment was my fault (???). These were not sweet like I imagined they would be. Could be my treatment w/ the mango. Be sure you do not cut the mango too close to the core....it can give the muffin and bitter/pine-y taste. Which is what I fear I may have did. Overall, I wasn't impressed with the flavor combination and end result. But maybe others will have better luck.
