Elin's Pickled Pumpkin

Just like my German grandmother made! I would add some notes: 1. Do not use carving pumpkin. Use pie or sugar pumpkins - they are smaller and in my area were labeled "pie" pumpkins. Carving pumpkins and pie pumpkins are NOT the same. Right after Thanksgiving, the priced dropped by half. 2. I followed the reciped exactly. You might be tempted to cook longer than five minutes because the pumpkin will not be completely translucent. DON'T do it! 5 minutes at a rolling boil is just right. They will continue to get translucent after removing from heat. This recipe yields a sweet/sour, flavorful, crisp pickle. 3. 5 pie pumpkins = 7+ lbs. of uncooked pumpkin and 8 qts. pickled.

Marshmallow Fondant

I have NEVER used fondant. This recipe worked exactly like described and tastes great. I will note for other novices, that I "over colored" mine. You might think that you have to go a lot darker to work in the sugar and not be too light, but that isn't necessarily true. I used gel coloring and ended up with "Smurf" blue instead of swimming pool blue. Fantastic recipe.

My 13 year old just finished making these for a Bridesmaids Brunch. I will roll them a little loose next time so that they puff more. Used raw sugar so that the crystals would show up. I pinched the flat bottom a bit before baking so they would be more heart shaped. Didn't have parchment and they turned out fine on a sprayed pan. Great easy recipe.

Banana Muffins II

Wonderful muffins! Recipe is perfect like it is, but for those who grind their own wheat...they are good with 100% whole wheat, too. I added 3/4 cup toasted, chopped pecans. When doubling the other ingredients, I forgot to double the sugar (I used dark brown) and they were still great! I also added 1 tbs. cinnamon.
