Awesome Egg Rolls

These egg rolls were so yummy. I followed the recipe exactly and was very pleased. I got 18, but I filled some of them very full.

Quick and Easy Chicken Noodle Soup

This recipe is very good. I used leftover turkey instead of chicken. I also sauteed the carrots with the onions and celery, and I substituted olive oil for the butter. Very easy and yummy!

Light Wheat Rolls

These rolls were so good! I made them as stated, except I baked them on a cookie sheet instead of muffin cups. I made them for Christmas Eve dinner and everyone loved them. We used the leftover rolls to make ham sandwiches (hot and cold), and they were awesome.

Banana Cake Cookies

I modified this recipe slightly. I used ground cinnamon instead of cloves and walnuts instead of pecans (just what I had on hand). These cookies came out so fluffy and yummy. Also, for the icing, I cut the ingredients in half. Then I piped lines across the cookies after they had cooled. The result is a nice sweet topping that isn't too much to overpower the cookie. I got a lot of good feedback from people I gave these to, so this recipe is definitely a keeper.

Sugar Cookie Icing

I was pleasantly surprised by this recipe. The icing is fairly easy to work with and dries firm, but not hard. Makes transporting and packaging them easier, imho. Definitely a good recipe if you want to make really detailed iced sugar cookies.

Cream Cheese Sugar Cookies

I modified this recipe slightly; I too used a whole block of cream cheese (8 oz). The cookie batter smelled sooo good. These cookies came out really nice. I chilled the dough overnight in the fridge. Definitely easier to handle when rolling out and cutting out shapes. The cookies were not as durable as some sugar cookies I've made (they would crumble if handled too much), but so much softer than regular sugar cookies.

Pizzelles II

Ah, pizzelles... how do I love thee! This recipe is very good and pretty standard for pizzelles. Definitely use butter instead of margarine, and sift the flour. I've modified this recipe by substituting almond extract for the anise and adding 1/4 cup finely chopped almonds. Also, for chocolate pizzelles, substitute vanilla extract for the anise and 1/4 cup unsweetened cocoa powder for 1/4 cup of the flour. So yummy!

Pasta e Fagioli a la Chez Ivano

I was really happy with how this recipe turned out. I halved the recipe and made it in the crockpot. I added Navy beans per another review and added a little more pasta (personal preference). I also substituted ground turkey for the ground beef, and I couldn’t tell the difference. My husband LOVED this, and I will definitely be making it again.

White Cheese Chicken Lasagna

I really enjoyed this recipe. I made it as stated except I doubled the garlic (and I probably could have added more) and substituted fresh parsley for the basil (since that's what I had on hand). This came out really good. I love spinach and thought that the amount of spinach was good. I might reduce the spinach next time, but only if I add other veggies to the mix (zucchini, squash, carrots, etc.). I also mixed the riccota with the chicken and spinach before layering.

Slow Cooker Chicken and Dumplings

This recipe is awesome with some minor changes. I used 2 FROZEN chicken breasts (just 2 of us), only 1 package of the biscuit dough, and only 1/2 of a chopped onion. I added: 1 can of mixed veggies (potatoes, carrots, etc.), some chopped fresh garlic (2 cloves), approximately 1/2 cup white wine, salt and pepper to taste, and about 1T fresh chopped parsley (towards the end). I cooked on low all day. Before adding the biscuits, I mixed some flour and water and added it to the slow cooker. I added the biscuits (rolled out thin) and turned the slow cooker to high about an hour before serving. It came out more like a soup, but it was soooo good.

Orange Beef and Beans

I really enjoyed this recipe. The orange flavor is refreshing and not overpowering. I substituted snap peas for the green beans cause that's what I had on hand, and served it with brown rice. Yum!

Chicken with Garlic, Basil, and Parsley

I really liked the flavor of this chicken. I also added some mozzarella cheese on top during the last 15 minutes, and it was a great addition. I thought the garlic slices were a little strong, so I think I'll mince the garlic next time. I also added a little balsamic vinegar and lemon juice per other reviews. Overall, a very nice way to dress up chicken.

Lisa's Favorite Carne Asada Marinade

I loved this marinade recipe. Made it exactly as written, and served it as burritos. My husband and sister loved it. I think I'll serve it on its own next time (maybe with some black beans and rice). It made good burritos, but the flavor of the meat wasn't as pronounced.

Tomato-Cream Sauce for Pasta

I followed the recipe exactly, and it was excellent! For next time I think I will cut the onion in half. The onions were very mild tasting, but there just seemed to be an excess amount. I served this with penne pasta (1/2 pound) and sliced chicken breasts. I mixed everything together and then served. This allowed the chicken and pasta to absorb some of the moisture and taste of the sauce. I also thought the amount of sauce was just right with the pasta and chicken (I don't like pastas slathered in tons of sauce), but think it serves closer to 4 people.

Caramel Popcorn

This was so easy. I took some other people's advice and made the caramel in the microwave. I had popped some popcorn already and put it in a paper grocery bag. I used three bags of standard microwave popcorn. Then I poured the caramel over the popcorn and shook up the bag. Then microwaved for 30 seconds and shook some more (and repeated this process 3-4 times). Then I poured it out onto aluminum foil to fully set. I thought the amount of popcorn I used was about right, but you could use less popcorn to get a heavier coating. It was so delicious. My husband doesn't particularly like popcorn (like the movie theater kind), but he gobbled this up. I will definitely make this again!

Slow Cooker Texas Pulled Pork

The flavors in this recipe are excellent. I made no changes, but I did cook on low for just under 10 hours. I could barely remove the roast without it falling apart. I shredded the meat and returned it back into the slow cooker while I toasted the buns and made some coleslaw. Very easy and a perfect busy day meal.

Great-Aunt Nina's Noodles and Chicken

This recipe is excellent and very easy. I used a whole chicken and removed the meat from the bones while I was cooking my noodles (I cheated and used dried egg noodles). It really didn't take much longer to do it this way, and it's cheaper too. I also added peas per another review, as well as an extra carrot. Next time I will reduce the number of onions and maybe add a bay leaf to the crockpot. Otherwise, this recipe is spot on. My husband loved it!

Asian Orange Chicken

Very yummy recipe. I enjoyed the texture and flavors so much. The only changes I made was I only marinated the meat for 30 minutes, and I cooked the chicken in sesame oil instead of olive oil. My guests loved it and there were no leftovers.

Waldorf Salad I

Very easy recipe. I used gala apples. I also added more walnuts and grapes. I had quite a bit of leftover dressing, so I omited about a 1/4 cup of it. Chilled it for about an hour before serving, and my husband loved it. This is certainly a keeper.

Blueberry Cream Muffins

Very easy and yummy! I substituted half the sugar for brown sugar (just a personal preference) and added some additional blueberries. I also topped some with a crumb topping and some with sanding sugar. Everybody loved them!
